Does anyone have any really good honey recipes?

My lovely FIL has given us a jar of honey from his bees. Obviously honey on toast was my starting point for this morning, but I'm also looking for some nice recipes where honey is a key ingredient.

I'm thinking maybe a honey cake? Muffins? Or savoury: honey and ginger baked chicken thighs? Something like that? Open to all ideas.

There's a pretty good selection on the good food website but I'm hoping someone here will have some personal recommendations as well Smile

If you like spices nothing beats Pain d'épices, a French cake or quick bread. Its main ingredients are rye flour, spices, and good quality honey. There are dozens of variations but these are some of my favourite ones -

Homemade honey comb with a spoon of honey is amazing. Melt 3 tablespoons of sugar, stir until it starts to turn golden, stir in half teaspoon of breadsoda and a spoon of honey. Pour onto a sheet of greaseproof paper to set. Yum.

I do a slow cooker gammon with honey, wholegrain mustard, cloves and brown sugar with a bit of water. It's my absolute favourite meal.

I recently had a chicken breast to use up so whipped up a quick honey, mustard (Dijon to counteract sweetness and wholegrain cos YUM!), cream and leek sauce using a small amount of chicken stock too. I just seasoned and fried off the chicken breast then popped it in the pan with the sauce as it reduced.

Moroccan chicken thighs in honey and tomatoes (Google has a lot of recipes) is rather tasty.

Chinese crispy pork belly. Honey, brown sugar, Chinese five spice, fresh ginger, garlic and soy sauce poured over 1cm slices of belly pork. Marinate overnight and oven cook until very crispy. I make up a vegetable fried rice to go with it and drizzle the extra sauce over it.

I don't like honey on it's own but I don't half go through a lot in my cooking. My mum gave me a jar of fancy Greek imported thyme honey which I'm dying to try., I have half a dozen jars of Rowse honey in my pantry then a friend who works in a factory handed me a bucket of it. A bloody massive bucket full. WTF am I to do with that? I almost wish I liked it in tea or on toast.

Nigella's honey semifreddo. Uses it in main dish and for drizzling before serving too.

I recommend going to Nigella’s website and putting honey into the recipe search engine. You’ll get loads of ideas, I expect, and I don’t think I’ve ever had a flop with a Nigella recipe.

I agree that cooking it is generally best avoided - you just don't get the same flavours/aromas when it's heated. Honey ice cream is delicious though, especially with a little extra honey drizzled on top. It's lovely with yoghurt too. Honey buttercream is nice too.

@UnaOfStormhold and @Flamingolingo Am I going about this all wrong then? Do I need to just stock up on crumpets, bread, English muffins and porridge to have it on instead? That'd be no hardship...

I think simple is good because it allows the flavours and scents of the honey to come out. We keep bees and every harvest is different depending on what they have been foraging on. We do cook with it too because we have loads of it, but you can't taste the flavours so well after heating or mixing with strong flavours. Good honey on crumpets is wonderful...
