I'd like to make a sticky toffee pudding for a work colleague as part of a secret Santa gift. Can anyone recommend a recipe and an idiot's guide on how to make it to heat up later?

Ah snap Asvan! You often see it for sale on the shelf but I have no idea how to make it shelf stable myself. I've never even made the fresh version!

I think this is a nice gesture, but there’s no way I’d eat a sticky toffee pudding that I didn’t know who cooked or how hygienic they were.

I’d buy one, these are great.

I didn't ask if anyone would eat it? I'm well aware that I can buy pre made puddings but that's not what I'm asking here.

You can treat it as any cake when it's baked. Just cool it in a dish that can go in the oven or microwave, wrap it well and it should keep for a week. Give instructions for re-heating.

I don’t understand what you mean by shelf stable, like it needs to keep outside the fridge? You’d need preservatives and chemicals for that, I assume!

Yes possibly preservatives ( which obvs don't want to use!) Heruka. They're expensive puddings though so I thought perhaps no artificial ingredients (can't get them to load). Either way I want to give it to be heated up at a later date.

It is basically a cake as said above. I would make sure there's no cream in the sauce though if you want it to keep a while. Not made one so don't know if cream features.

Yeah I've never made one either! I know it's often served with a cream but I wouldn't do that here for obvious reasons.

It could probably last longer than a week as it's probably got the sugar content of jam (!) so should preserve well. But I'm not sure I'd risk it for someone else.

This one is awesome. Genuinely foolproof. You can do it as individual puddings, or a giant one that feeds 8 (in a big stoneware or pyrex dish like you'd use for lasagne). It freezes well. Make double quantities of the sauce!!
