Savoury muffins

I love a muffin but they’ve always been a bit of a nemesis of mine. They always turn out like rocks or cake. I had a really delicious cheese, sweetcorn and chipotle chilli muffin in a cafe the other day and I’d love to be able to make a decent muffin. Anyone got any reliable recipes? I’m a good baker normally but this is a blind spot for me! Sweet recipes also welcome.

My muffins are never great (too much mixing??) but cornmeal ones turn out pretty well every time. I use this recipe, but fyi it uses cups. www.blessthismessplease.com/the-best-cornbread-recipe/

I haven't actually added things to these ones but I think I'd be tempted to add stuff (ham, cheddar, coriander, spring onion...) to the dry ingredients as my problem with ordinary muffins is adding the blueberries/ chocolate chips/ whatever at the end and then it needs too much mixing to distribute them.

I also usually add some cream as part of the milk.

Maybe a better baker can advise!

What you need is the ultimate muffin cookcook:

"Muffins: fast and fantastic" by Susan Reimer.

I've never had anything from it go wrong and it covers everything from your standard American muffin, to chocolate chip to cheese to cornmeal to pumpkin.

Mainly sweet recipes but so many variations and once you've got a reliable savoury one they're easy to adapt yourself as well.

It's really good, very clear and also not actually enormous. I think the key thing with muffins is to only just mix them, and also that they need a lot of raising agent. The deeper the tin the happier your muffins will be (up to a point!) as well, as the case then has more support up its sides.

DS doesn’t like bread so I make a lot of muffins for his lunch box.
Don’t over mix them. You sift your dry ingredients together and whisk your wet ingredients together. Then you combine the two, stirring until they're just mixed. It usually only takes 10 to 12 strokes. The batter should be lumpy and can even show a few spots where the flour has not been entirely mixed in. This is a good sign. Don't mix the batter until it's uniform and smooth and don't use your stand mixer.
For specific recipes, I’ll be making these a few times over the next month. Tesco are great for muffin recipes. These banana and peanut butter muffins are very popular too.
This recipe is similar to the one you describe, and turns out well every time. No need to use gluten free flour if you don’t have to.

I make these a lot . Started when DGS was little , he loves them . Now I do them a bigger proper muffin size .

I use different herbs, depending on what I have on hand. A tweak which is very popular with my family is replacing tarragon and thyme with chives.

Delias savoury mini muffin recipe is great. As others have said, don't overmix and they turn out brilliantly.

I love feta, olive, spinach and sundried tomato muffins. There are recipes online but you have to watch out as some of them miss out a crucial ingredient, only I can't remember what!

I use a fantastic Sue Lawrence recipe for milk cheddar scones, although you can use any cheese (obviously!). Very very quick and easy, I like to freeze a batch so I can do quick lazy lunchboxes if I don't get round to it the night before! We like to change them up and add different bits like ham, salami, leeks, cherry tomatoes, jalapeños etc. happy to post a pic of my recipe if you like
