Emergency Biscuits needed!!....

have no ££ and 3 kids clamoring for biscuits (or cakes what have you!!)am a bit poor at baking have the following in cupboard so.. what can I make with
Plain Flour
Baking Powder
2 eggs
Vanilla Essence
1/4 pint milk
Porridge Oats
Honey
About 2 spoons of golden syrup
oh and a jar of mincemeat

preferably something biscuity (DD hates flapjack by the way )
all ideas gratefully received!!

6oz flour
3oz cheese (if you have any) - could use the honey
1oz milk
1 egg

Mix eggs and milk together.
Mix together - saving egg mixture/cheese for sprinkling
Cut into shapes - baste on some egg mixture and sprinkle with cheese

If using the honey would just mix it on and forget the basting/sprinkling bit! You could sprinkle on the oats though ...

Bake for about 20 minutes

Let me know how you get on as its what i remember from a recipe!

Cream together 50g sugar and 50g butter
Add a tablespoon or two of mincemeat and 130g flour
Add 1 beaten egg (or a bit less if it's a really big egg) to make a dough that you can knead
Knead together
Roll out on a floured surface to 1/2 cm thickness
Use festive cutters if you have them otherwise whatever you have
Cook at Gas 4 for 15m
Cool
Stuff fat face repeatedly

same some of the egg/cheese mix I meant - most of it in with the flour!

Basic Biscuit Recipe

175g/6oz Plain Flour
100g/4oz Butter or Margarine
50g/2oz Caster Sugar

Pre-heat oven to 150°C/300°F Gas 2

Cream the butter or margarine and caster sugar together until they are light and fluffy. Stir in the flour and once mixed knead the dough together until it forms a ball, add a sprinkle of flour if the dough is at all sticky.

Roll out the dough on a lightly floured surface until it is about 5mm thick.

Cut out the dough using your chosen cutter.

Place the biscuits on a floured baking tray and bake in the centre of the oven for 25 minutes or until golden brown.

Let the biscuits cool on a wire tray before decorating.

Jammy Thumbprint Cookies

Ingredients
155g self raising flour
125g corn flour
50g icing sugar
225g butter or margarine
½ tsp vanilla
Jam of your choice (OR MINCEMEAT!)

Method
Heat an oven to 160C.
Sift all the dry ingredients into a bowl and add the butter and vanilla.
Cream everything together until combined. At first it may seem too dry but work with it and it will suddenly start to come together. Use your hands to incorporate the last few scraps of flour.
Brake off walnut sized chunks of dough and roll into balls.
Place on an un-greased baking tray and press your thumb into the top of the dough ball to create a hollow.
Add ½ tsp of jam (or mincemeat) into each of the hollows, but don?t overfill.
Place in the oven and bake for 12-14 minutes, until slightly puffed up. They should remain very pale in colour.
Leave them to cool for only a minute or two before transferring them to a cooling wrack with the help of a palette knife.
They will firm up slightly on cooling but will remain very soft.
Makes 16 cookies.

simple cake: weigh your eggs and use the same weight of flour, butter and sugar. Add vanilla essence, chuck in bun cases or suitably sized greased n floured tin. Bake until golden and springy, leave to cool and add jam/nutella/lemon curd and/or custard/glace icing.

thank you all so much have cut and pasted your recipes and put them in my one and only cookbook...Kids really enjoyed themselves and want to do it all over again [hmmm]..might try cake today
