are raw eggs generally considered ok these days?

can I make peppermint creams for christmas presents? including for my robust, but 77-year old mum? and my slightly less robust 77 year old dad?

Anyway, I'm sure you can make peppermint creams without egg in.

Well I've just checked my recipe and it uses dried egg white.

Ok here it is:

It makes 25 peppermint creams.

You need:
9oz/250g icing sugar
Half the white from a small egg, mixed from dried egg white (mix as directed on packet)
1 teaspoon peppermint flavouring
2 teaspoons lemon juice
Food dye

  1. Sift icing sugar into a bowl and make a hole in the middle.
  2. Add egg white mix, peppermint flavouing & lemon juice in a bowl, then pour into sugar.
  3. Stir with blunt knife, then squeeze thrugh fingers to make dough.
  4. Cut dough into 2.
  5. Add green dye to one half and mix in, if too 'wet' add more icing sugar.
  6. Roll out dough and use cutters to make shapes. Using icing sugar on work surface and rolling pin to prevent sticking.
  7. Repeat with white dough.
  8. Lift shapes onto baking sheet and leave to harden for at least an hour.

I assume that dried egg is pasturized?

i made these last year using the dried egg white packet mix stuff and they were nice, i gave them to relatives etc.

but i also make them with raw egg white, i just make sure that i use good quality, free range, organic eggs

the research shows that the raw egg is actually ok, more people become ill because they dont wash their hands after handling the egg shell, which is the bit likely to contain bugs

i am preg and still have things with raw egg in, cake mix, peppermint creams etc, i am just careful about my eggs

and not through allergy but infected egg, even though free range, chickens injected for slamonella etc.
