Need recipe for birthday cake to take into nursery

Was going to make clementine cake then remembered it has no flour, just ground almonds, and of course it's a 'no nuts' rule.....

Need something quite dense as we have to travel quite a way and I can't see a sponge cake holding up

THought carrot cake but do 3 and 4 year olds like it?

carrot cake perfect. They'll never know what's in it unless you tell them.
With cream cheese frosting unless they also have a no lactose policy....

Not an issue at our nursery because I am no longer allowed to take in an homemade cake. So have to take a day-glo supermarket job as not even sure one from local bakery would pass muster.

Preheat oven to 180C
Grease and line deep round cake tin or two 7" sandwich tins

In one bowl, mix:
1 Tblspn white vinegar
2 eggs
1/2 cup oil
1 cup milk
1 cup cold coffee (hot coffee will scramble the eggs) or orange juice

In another, big bowl, mix:
2 cups plain flour
13/4 (one and three quarters) cup caster sugar
half a cup of cocoa
1 tsp salt
2 tsps baking powder
1 tsp bicarb

Mix the wet ingredients into the dry and stir well until fully combined.
Pour into prepared tin and bake for 45 mins.
Leave in tin until quite cold (ie when you get to nursery) then turn out.
