Ways to use up polenta?

Bought a packet of polenta to make the "Days out cakes" in the Planet Organic book. But the recipe is not v. good - the pancakes turned out far too fragile - not enough grains and too much yoghurt - and while DS enjoyed them they were hard to make (also five min a pancake with 10 pancakes = too much cooking time for me!!). So I'll probably stick to a standard pikelet recipe next time. But now I have a packet of polenta barely used - what can I do with it? Don't fancy stirring polenta for 40min at a time, any ideas for something quick and easy?

Use it instead of breadcrumbs when you want to egg-and-breadcrumb anything - great for thinly sliced chicken breasts, especially if you liven it up with a bit of chili powder or similar

We just use it as a 'potato substitute', by cutting it thinly and frying in a little oil. Apparently you can also do it sweet - I think you fry in butter then add sugar and syrup? I've only just discovered it myself, so will be looking out for new ways to use it!

anais, I was hoping to skip the "stir for 40min" stage of reconstituting the polenta. Re placenta, apparently it tastes like liver???

That's spooky, florenceuk, i was going to make those yesterday but I couldn't get any polenta... I'll make some muffins instead!

Take 1 cup of polenta, add 1/2 cup of olive oil, 2 tsp of chilli flakes and 3 tbsp of malvern salt. Mix well then apply as face pack. Leave for ten minutes, then add water to make creamy paste, rub in circles to exfoliate before washing off with warm water and asses milk.

Have no idea if this works but might do.
