If anybody reads this in time, please let me have your ideas!I'm a competent cook but at the moment I can't think of how to cook it.

Thanks!

What ingredients do you have for the sides? I think I would decide on the sides and then decide on a glaze/garnish for the salmon to complement the sides. Here's some suggestions to start you off:

Thanks! I've got cabbage, lots of courgette, carrots, potatoes, a swede, broccoli, etc.

I'm tempted to do a root Boulanger

I would just put knobs of butter along the top, black pepper and slices of lemon. Make a tent around it with foil and bake in the oven. (Not sure how big it is but might only take 20/25 mins at 180 - just keep an eye on it). Then if it's for Sunday lunch, I'd make a white sauce (or cheese sauce) to go with it and some green veg and potatoes (new or roast some baby potatoes). Enjoy!

I like that! I might also make a root dauphinois to go with it, as I've got tons of root vegetables to use up.

We do it with a glaze of grated ginger, honey and soy sauce. Then roast in the oven or air fryer.

Root vegetable dauphinoise sounds good. I would stick to something simple and acidic to counter the richness. Maybe roast the salmon with lemon and thyme, and steamed green vegetables? Or serve it plain and simple with broccoli with pine nuts and pesto or chargrilled courgettes dressed in sweet chilli and soy sauce?

If it's really good quality salmon, bake it in a foil parcel with some slices of lemon, dill and butter. Keep the liquor to spoon over the served fish/potatoes. If it's not, then open bake it with soy honey and ginger (equal soy to honey and ginger to taste).

I'd just steam the courgettes and stir fry cabbage as sides.

Thanks! I've got roots dauphinois in the oven, shredded onion and cabbage cooked in a small amount of butter and salmon with lemon and ginger in foil xx the kitchen smells lovely!
