If a recipe calls for fennell, and you don't like the taste

is there a good alternative ? .

I want to try a stuffing I saw on Jamie Oliver's new programme, its made with merguez and fennel, but none of us like the taste of fennell.

Would I just leave out the fennell, even though it is quite a substantial part of the ingredients.

I’d use something like leeks instead, so you’ll have a similar (ish) texture and bulk without the flavour.

But TBH if you really don’t like fennel I’d find another recipe!

What kind of fennel? Fennel tops, fennel bulb or fennel seeds?
If tops try Dill
If bulb try red onion/portobello mushrooms
If seeds try coriander seeds

I agree that this probably isn’t the recipe for you if you don’t like fennel.

I think leeks or onions are your best bet, as they will cook similarly and the taste will go with the merguez.

if I Google "merguez stuffing recipe" there are lots of merguez stuffing recipes which do not include fennel.

The fennel is the whole point of the Jamie Oliver one. I agreed you could use a mix of celery, onion and leeks to make up the volume but it might not be all that

Agree with pp. Find another recipe! Fennel is a bold flavour and anything with it in will taste of it (especially when it's in the title of the dish). Kind of like wanting a recipe for lancashire hotpot when you don't like lamb

Fresh fennel bulb when sautéed or braised tends to become more mellow as it cooks.

Thank you, that's it !!

Substituted leeks for the fennel, it is really, really good. I ate spoonfuls of it while I was letting it cool down before stuffing the lamb.
