Cake baking in advance!

7 replies

I'm baking a cake for my SIL's birthday which is on Tuesday. (Specifically this one: www.goodhousekeeping.com/uk/food/recipes/a569327/strawberry-prosecco-celebration-cake/)

I have to take it to London, where they live, tomorrow, so I'm planning to bake it tomorrow morning and assemble it on the Tuesday. Three questions:

  1. It requires Prosecco to be poured on it once cooled. Can I do this in advance or should I do this on the day I assemble it?
  1. If I can't, can the syrup be made in advance at least? It does not need to be warm when poured on the cake.
  1. Can I make the buttercream in advance?

Thank you!!!

Bake the cake and store before the syrup stage. Tbh I would do the syrup and buttercream on the day as they may set and be tricky to revive.

Me too.
I'd actually make the buttercream on the day too. If it's warm it might turn.

I'd make the cake, the syrup and buttercream in advance and take them all. I used to make cakes professionally and as long as you have the facility to give the buttercream a quick whisk through to soften it up before you use it. buttercream and syrup can be chilled and brought to room temp on the journey or for a couple of hours before assembly. Once the cake is completely cooled wrap in a layer of baking paper then clingfilm.

You can prepare all the components ahead and assemble on the day. Buttercream will just need to be beaten again.

Thanks all!

For those that said the buttercream will be fine to be made in advance, do you think it will still be ok travelling in the car on the way there and then put back in the fridge again once I get to the house?

@CocoandCleo

Thanks all!

Yup, it'll be fine as long as it doesn't melt completely. In a cool box or cool boot of the car it'll be fine.

Thank you @GherkinsOnToast Smile
