Can I do stew and dumplings from left over roast beef in the slow cooker?

Really busy week next week at work. Trying to meal plan using slow cooker so that food is ready when we get in.

Having a roast dinner tomorrow and was just wondering if I get a bigger joint could I pop the leftovers in the slow cooker with some veg to make a stew or will the meat just be over cooked by that point. I've never put leftovers in.

Other issue is time. We will all be out of the house a lot. Last one leaves at 8 for school, and they'll be first home at 4.30 ish. Other plans are a curry, chilli and spag bol. Can I put the slow cooker on a timer? So it comes on at 10am which cooking on low means 6pm dinner for the kids. They can switch it to warm and DH & I will eat it later.

The food will be sat in the slow cooker from 8 so 2 hours before it's switched on. it's prob not ideal I know, but likely to cause food poisoning ?

Roast beef isn't good stew meat - too lean. When I have leftovers, I just slice them up very thin and use fir sandwich meat or simply as a cold dinner.

I imagine it would fall apart a bit too much, if it's been roasted then in a slow cooker- might be too mushy.

How about slicing the leftovers to go in gravy, stick back in the oven for 45 mins to warm through with chips, carrots and peas?

Agree that it would be too lean to make a good stew. I find left over roast beef makes good fajitas or stir fry and both can be a quick mid week dinner.
