Vegetable heavy recipe book?

I'm looking for a recipe book for a gift. The recipient likes to eat mostly veg, with some carbs/protein thrown in, rather than dishes which are heavy in meat, pasta etc. Finding a book like this is tricky!

It also needs to be:

  • focussed on dinners
  • reasonably low calorie (which it should be if veg-heavy) so not pages and pages of veggie burgers, burritos etc
  • easy and quick cooking
  • not too reliant on fancy pants ingredients - we live rurally and can't get things like samphire, pak choi and miso.
  • in UK measures (not cups!)

Recipes she would like would be things like really good ratatouille, stews, moussaka etc. She won't be cooking flatbreads on a griddle or making her own kimchi!

The only recipe book I've managed to find which might fit the bill is the Quick Roasting Tin - Rukmini Iyer. Does anyone have it and think it would be right? UK measures?

Flatbreads on a griddle takes about 5mins and just some flour - she should try it!

But yes, the Roasting Tin books (the Green Roasting Tin is veggie) would fit the bill. It's easy, delicious and uk measures.

Or Hugh F-W's Veg book would be good too.

I like ‘The Green Roasting Tin’. They are pretty quick to assemble. Some are good with bacon.

Nigel Slater's Greenfeast books are seasonal so offer fab veggie ideas for each season.

Maybe something with flexitarian in the title?
I have heard great things about all the "roasting tin" books, so the green one is probably v good.
The Leon books are absolutely beautiful, and they have veggie versions, but I couldn't comment on whether the recipes work well, as they're just on my wish list at present...

The first Roasting Tin book (yellow cover) does include some meat/fish but also lots of veg dishes

To answer your question about the Quick Roasting Tin, I have it and find it really good. The recipes are delicious and I’ve found all have worked well. It has a high proportion of vegetarian recipes and many of the ones which contain meat would be easily adapted to veggie ones.
