Hi.
I'm looking to make a cake for my daughters birthday.
I'm looking to make rainbow sponge layers with buttercream filling and decorated with a unicorn theme. It's not too bad at cooking but it's the first time.i will attempt something fancy.
I'm wondering if anyone has a recipient with instructions from beginning to end including the icing/ decorating.
I did make a rainbow cake before but the colours didn't turn out very strong.

You need top quality food colouring not the supermarket stuff

I just use a vanilla sponge recipe
4 good free range large eggs 80z sugar / unsalted b it tee/ a r flour and a dash of milk
Proper vanilla extract.

Those quantities make two decent 20cm / 8 inch sandwich cakes

For a big rainbow cake you’d need to triple those quantities to get the correct
Amounts.
Weigh the mixture in grease roofed scales to get equal amounts.
Add the gel colouring with a toothpick and whisk until you get the desired colour.

Proper butter for buttercream

A crumb coat of uncoloured buttercream and leave it to set before the finishing icing and design. This makes a huge difference

Depending on the size and your cake decorating experience you might need roads to keep it together

Your best bet for decorating is to google a simple rainbow unicorn cake and get some inspiration

Would Dr Oatker food dye be strong enough?

Also do you think a buttercream frosting would be too much buttercream? I might try and get a raspberry flavour for the buttercram.

I can bake biscuits and plain cakes no bother. But I am a complete novice when ot comes to anything fancy. I've always bought her cakes but really wanted to try making it myself this year. I find Googling stuff very overwhelming.

I did one of these ages ago. I used a thin layer of french buttercream (make it with egg yolks) and jam between layers. I would absolutely test the colourings for flavour before cake baking day. The yellow flavour was utterly vile and ended up leaving it out in favour of plain sponge. We had the colourings in tubes as I think they are easier when children are baking.

No, you need gel colours for an intense cake. You can buy them on Amazon though.

I made one for my mums birthday, for colourings I used the Dr Oetker rainbow cake kit with a normal Victoria sponge recipe. I didn't want a massive cake as there's only 6 of us so used 6" tins. I used jam between layers, ready roll icing for the outside with buttercream flowers using the rest of the colourings. The horn was the end of an ice cream cone wrapped in the remaining ready roll icing. Eyes added with edible ink felt pens.

I use Wilton Food Colouring Gels. You only need a tiny bit for very vivid colours and they last forever - also good for colouring home made playdough and cornflour gloop etc
