Does it have to be breadcrumbs? Personally I'd just slice it and freeze and then take slices out as needed for sandwiches etc

I make panko breadcrumbs.

Make breadcrumbs, spread out on trays, oven bake on the lowest heat.
Turn over a few times until crisp - 20-30 mins.
Cool, airtight container, lasts for months at room temp.

If you have a loaf that is hard and stale, blitz it and just freeze as-is - I use them straight from frozen eg sprinkled on top of macaroni cheese to make a crunchy top.

Because bread has little water content , it never really freezes as such but is a good way to store long term. As you say blitz and put in freezer bags and freeze.
As a side note , you can make up crumble mix , butter , flour , sugar ( as per usual ) and freeze that. Again as a dry mixture , doesn't freeze , and can be used immediately.

I try to remember to dry them out in a cooling oven that has just been cooking something else then they do store in a jar, but yes you can just freeze them in a bag.

You need to air dry it thoroughly - either on the side for several days or in a low oven for several hours, until bone dry. I then slice each slide because my food processor can't cope with big chunks and I always end up with lumps that won't blitz, but I've no idea if that's because my FP is old. Then Chuck in freezer either in a bag or jar or something. It won't clump so no need to freeze on a tray or anything.
