best way to cook sausages?

I must be doing something wrong! Im a bit new to cooking sausages and am stinking our entire flat out in the process.

Grilled or pan cooked - pierced with a fork or not, the smoke is everywhere and then whole house reeks for days (all windows open btw and extractor hood on full)

what am I doing wrong???

Fried is tricky. Often over black on the outside and not cooked on the inside.
Don't know why you're having a problem with grilled - is your grill pan clean? Or are the sausages too near the heat?
Personally my favourite is the oven. 35 mins on gas 5 or 6. Lovely. Mmmmm....

Do them in the oven. They take longer but no smell. Roast them in a pan with a bit of oil on the bottom of the pan to stop them sticking. Give them a shake after 15 mins, they should be ready in about 30-40 mins if they're on a high heat.

or revolutionary third way...

boil them for 10 mins then into frying pan with balsamic vinegar. i guarantee a delicious result.

I always do them in the oven, nice and evenly cooked this way and no smell.

Oven - on a sheet of baking parchment (no stick) in a flattish tray - about 30 mins for thin ones, 40 mins for fat ones, c 200 degrees.

Not quite as nice as fried, but effortless and relatively clean.

is brilliant, they are cooked but not dried out and you get caremelllling with no effort. the amount of sausage and vinegar sorts itself out too, vinegar taste evaporates as they become stickier.

I would normally subject them to a sustained heat for a period of time until they are done.

You should find the correct appliances to do this in the kitchen.

(It's the room at the back of the house downstairs with all the food in)

I saw Nigel Slater do them in a pan.he put it to the lowest possible heat- using a diffuser if necessary. a tiny ammount of olive oil and let them heat through and brown turning them gently. Takes ages but makes sure they are cooked all the way thru.

Fried is the best. Oven cooking makes their skins go nasty. I have the back door in the kitchen so I just leave that open, but it's only if they burn that they smell really.

IMO, dry fried in a non stick pan and not pricked (ooh suits you!) as this way you get nice crusty ends.
And yes, I have had a drink so cannot be bothered to word it in a such a way that you cannot rip it out of me.... LOL
