Tinned mixed beans

Any ideas what I can do with a tin of mixed beans (haricot, pinto, borlotti, cannelini, kidney) in water? Bought in error and not an expensive one but I'm curious to know what I could do with them. TIA

Put them in any kind of soup or casserole or add the beans to minced beef to bulk out a chilli or a Cottage Pie.

I make a mean chilli with them. Add sour cream and brown rice to accompany.

You can also make a thick chilli (cook it right down) and once it's cooled down you can use it with wraps and add salad.

Loaded fries, mix the beans with fjaita seasoning, add guac, sour cream etc… yum

I also use them in a chilli, as a change from just kidney beans.

Mash them with sweet potato, add paprika, make them into patties, use breadcrumbs if you have them and make into a burgers Serve on a bun with bbq sauce, mayo and guacamole and red onion.

Bean salad. Drain them, rinse them, let them dry off a little and then add to a salad bowl where you've put chopped peppers (more than one colour, ideally), finely chopped spring onion and parsley, sweetcorn (I use tinned, drained). Make a vinaigrette with extra virgin olive oil or other good oil, wine or cider vinegar (or lemon juice), a little Dijon mustard, plenty of salt and pepper. Pour over the beans and vegetables and mix well. Keeps well in the fridge for a few days if it's too much to eat up at one meal.

I use mixed beans when making chilli as dh is not too fond of kidney beans. With your tin there would be less kidney beans to pick out.

Mixed bean fajitas is a regular in our house. Fry red onion, and peppers, add seasoning, beans, tomatoes. Stir in some grated cheese near the end of cooking and serve with trimmings as usual. It’s also great in wraps and sandwiches the next day.

Another vote for mixed bean salad, rinse and drain, add some crushed garlic, finely chopped shallot or spring onion, and a robust dressing. I like it with Caesar dressing. It's especially good with smoked mackerel fillets for a quick lunch.

Or use with tomatoes and onions etc in a sausage casserole, a winter favourite!

This is a Raymond Blanc recipe, very easy & we enjoyed it :-

COD CASSOULET

Serves 2 Prep 5 mins Cook 15 mins
• 2 cod fillets (each about 140g/5oz), skinless
• 4 large pinches of sea salt
• 4 turns of ground black pepper
• ½ a white onion
• 100g (3½oz) chorizo
• 1 tin of mixed beans
• 6tbsp olive oil
• 400g (14oz) tomato passata
• A generous pinch of cayenne pepper
• 2 heaped tsp smoked paprika (optional)
To finish
• Juice of ½ a lemon
• Extra-virgin olive oil
• A small handful of chopped flat-leaf parsley

Season the cod fillets with 2 pinches of sea salt and 2 turns of black pepper and set aside. Finely dice the onion and chop the chorizo into chunks. Drain and lightly rinse the mixed beans.
Heat the oil in a large non-stick sauté pan (or deep-sided frying pan) on a medium-high heat. Add the onion, chorizo and remaining salt and pepper, cover with a lid and cook for 3-4 minutes, stirring occasionally to prevent burning.
Add the mixed beans, passata, cayenne pepper and paprika, if using. Stir then cook – still over a medium-high heat, but without a lid on the pan – for a further 3-4 minutes, stirring occasionally.
Reduce the heat to medium and lay the cod fillets in the pan. They should be semi-immersed in the cassoulet but, if not, just add a little water.
Cover with the lid and reduce the heat so that the cassoulet simmers gently for 5-6 minutes. The cod fillets do not need to be turned.
Remove the pan from the heat. Add the lemon juice and a couple of dashes of olive oil, and scatter with the parsley.

Drain them and rinse.. Mix with tuna and mayo. Have for lunch with a bit of salad.

Bacon and bean soup, use one the cheap knuckles of bacon, soak it in cold water overnight to get rid of a lot of the salt. Simmer in fresh water, add onion, carrots and celery, bay leaves if liked, and then the beans towards the end of cooking.
Simmer until the bacon is cooked, remove the bacon and chop it up. Serve the soup as it is with some of the diced bacon stirred in, or blend the soup to a thick rich consistency and garnish with diced bacon.

This is a really economical soup, as you could serve the bacon sliced with mash & cabbage, or use it cold in omelette or quiche. Serve the blended soup with fried croutons instead of the bacon chucks. You’ve also still got the bone of the knuckle that you can make another pan of stock with! I know, I know, it still doesn’t beat the Mumsnet chicken!

we also liked bean burgers despite not being vegi. Also spanish/posh baked beans - pork breast with the skin removed covered in brown sugar and tom puree and garlic and covered in water and cooked for about 4 hours on low heat 140ish.
