Too much mint

DH has chopped down our mint plants to wrap them up for winter. I now have tonnes of mint leaves. I've frozen a load in ice cubes for drinks which is how we usually use mint. What can I do with the rest?

I'm not sure you can do the same, but with coriander I just chop it and stick it in a bag and freeze it - I then use it straight from the freezer.

If you've the patience you could make mint jelly. I find it nicer than traditional English mint sauce. And, if you're being really sniffy about it, English mint sauce is supposed to be made with the first mint of the season, not the last! But, perhaps, only if you're Mary Berry!

You could dry it out and then have a sealed jar of dried mint to use through the winter? Or make a massive tabboukeh for the weeks lunches....

I open freeze the leaves on baking trays, then store them in plastic bags or tubs. It works really well.
