Whats the difference between single cream and double cream?

A recipe I use asks for double cream. I find it too creamy. Will it help if I used single? Is one better for you than the other?

afaik single cream can split if cooked

Try creme fraiche - that will add a nice sharpness or just use less double cream. Single cream will split and be horrid.

also on the is one better for you than the other question - single cream = 36% fat, double 48%.

I used a new recipe tonight which stated 'use all double cream or substitute 1/2 double cream for low fat cream cheese' (I went for the whole lot of double cream as I can blame to extra weight on growing baby )
