What noodles do Chinese takeaways use?

Does anyone know what kind of noodles do Chinese takeaways use in their chow meins?

I think they're egg noodles? But whenever I buy egg noodles from the supermarket, they never taste the same, they always have a bit of a weird taste to them and they don't feel the same. It doesn't seem to matter if I buy fresh or dried, I've tried all sorts of brands, and they just aren't the same. I'm a fairly good cook and I love to eat noodles I just can't seem to make them not be horrible when I try to make them at home.

I'm hoping someone here can help me!

Definitely not rice noodles for Chow mein.

It is egg noodles but you need to buy it from the oriental supermarket.

I think it's probably the flavourings that you add - or don't add - to the noodles that make the difference.
On the advice of a Chinese friend, I boil mine in fast boiling, salted water for 4 minutes - using 2 forks to separate them. Drain, rinse in cold water, then return to hot pan with & toss with a little veg oil.
Like any form of pasta, they carry the flavour of whatever you cook them with.

Egg noodles but I think the takeaways cook them in lots more oil than you would use at home

I use slightly too much sesame oil and a sprinkle of salt to to coat them once cooked, have almost got the flavour right but the noodles themselves not yet - need to experiment with what the oriental supermarket carries.

Are you adding the right sauce? It's usually pretty simple with oyster sauce, soy sauce, Chinese rice wine, water with cornstarch, sesame oil. Gives the noodles that authentic flavour.

Thanks everyone, I'll give the lucky boat ones a try. My sauces are fine, if I make a dish to go with rice for example. I just can't get a noodle one to taste right so hopefully these will be what I'm missing!

It's the MSG that gives the authentic Chew Mein flavour. I never use MSG and can't use sesame oil so mine never taste the same but still enjoyable.

Defiantly Lucky Boat Noodles. You can get 10 potions on Amazon for £12.99, absolute bargain when they charge you £8 at the Chinese for a bowl of noodles.
