Ideas for fish

We all like battered/breaded fish and I like buying fish fillets and breadcrumbing them myself but I want to mix it up a bit and add something to the breadcrumbs or battering them.

Does anyone have any suggestions please? I was thinking Cajun battered but can't think of anything else

We like this Indian version www.bbcgoodfood.com/recipes/indian-crumbed-fish-spicy-chips I normally serve it with Bombay potatoes instead of chips.
I’ve also tried this Thai style recipe www.bbcgoodfood.com/recipes/coconut-crumbed-fish-sweet-chilli-slaw-0 and served it with jasmine rice

Limes juice chillie oil lime zest and pepper and chillie flakes.

Leave in fridge for a day.

Oh sorry I thought you wanted to change away from breaded/battered but looks like you want to keep that aspect!

I take Prosciutto and spread thinly on a silicone baking sheet then bake it in the oven until it’s really crisp and dry. I then blitz it in the food processor until it’s in a kind of crumb then mix that with the breadcrumbs and parsley and use to bread the fish. It’s really good!

I really like fish with white wine!
An extra special treat for if I'm cooking for myself and someone special! I use this recipe but vary it depending on my mood :)

Have you tried tempura batter for your fish? You can get packets of tempura flour, and you mix it quickly with chilled sparkling water, for a really crunchy batter. It also works well with vegetables such as thin aubergine slices or broccoli florets.

I use chorizo...just fry off the sliced chorizo in a dry pan to release the oil, add the chunks of bread to the pan to soak it up then tip the lot into food processor, whizz to crumbs. Squeeze a bit of lime juice on to the cod fillet, and press a generous amount of crumbs on top before baking in the oven.

Not batter but I make a delicious recipe which tops the fish fillet with lemon zest, breadcrumbs and finely diced chorizo.

@WithMyEncyclopedia we both like fish tacos but I've never made them so I'll definitely give it a try 😋

get those nice straight thick fillets ...salmon works best for these two options, but no reason why a chunky bit of any fish wouldn't work

  1. dry them and daub with red pesto, and the press breadcrumbs onto the pesto, fry in a hot pan with a little oil and butter, don't poke them about or the crumbs will come off.

  2. sit the fillets into a shallow dish...squeeze over lemon or lime juice, a good couple of tbs of soy, a pinch of chili flakes and some finely sliced spring onion, a tsp of grated ginger and grate a couple of garlic cloves in too Splash of sherry or martini won't go amiss either, but not essential. Leave for a couple of hours, ideally not in the fridge, you really want to be cooking the fish from room temperature.
    Put fillets into a really really hot pan skin side down, you are aiming to sear/blacken it. Once the fish is almost cooked to the top, flip it over and turn off the heat, the top will finish cooking in the heat of the pan

Serve over egg noodles, I do these in a pan of boiling water, and drain them, put the marinade into the wok and let it cook and sizzle and put the cooked noodles in at the last minute and shake them about. Add a little sesame oil and set the salmon on top with some chopped coriander or chives.

Essentially you can stick the breadcrumbs to the fish with any sauce you like..mayo, pesto, sticky chilli, BBQ ....same for chicken, and it's slightly less mess than flour, egg and then crumbs!

Some dry peri peri spice has been working well for me. Not the sauce, the dried peppers. Mix with whatever coating you are using.

Try different liquids in your batter, beer, sparkling water, that type of thing.

Getting away from batter and breadcrumbs try pizza toppings and bake in the oven. Things like slices of tomato and chorizo with some cheese.

I also cook fish in passatta with nuts.

We went old school a few days ago , smoked haddock , poached it in milk. House still stinks 3 days later !

@VictoriaBun I know it sounds like it would be terrible but somehow the smoky flavour and the OJ create a nice flavour.
