Can anyone give me a foolproof biscotti recipe please, just spend the whole morning in the kitchen with a recipe from Sweet Baby James and to be frank is was an expensive fuck up.

I was looking for a biscuit recipe for another thread and foudn this for you! it's not a traditional biscotti recipe but it's good! (Sorry it's in cups etc)

White Chocolate-Cherry Biscotti Biscuits

Preheat oven at 160° C (325°F)
Preparation time: 10 minutes
Cooking time: 20-25 minutes
Makes 26 biscottis

2 cups flour
1 1/2 tsp. Magic Baking Powder
1/2 cup butter or margarine, softened
1/2 cup sugar
2 eggs
1 tsp. vanilla
2 pkg. (6 sq. each) Baker's White
Chocolate, chopped and divided
1/2 cup sweetened dried cherries (I always use dried cranberries)
1/2 cup chopped pecans (optional)

Method

  1. Preheat oven to 325°F.
  2. Lightly grease and flour large baking sheet, Mix flour and baking powder in medium bowl; set aside.
  3. Beat butter and sugar in large bowl with electric mixer on medium speed until light and fluffy. Add eggs and vanilla; mix well.
  4. Gradually add flour mixture, beating until well blended after each addition. Stir in 1 1/2 cups of the chopped chocolate, cherries and pecans.
  5. Roll dough to 1/4-in. thick on floured surface. Cut with 3-in. cookie cutter, re-rolling dough scraps as needed.
  6. Place biscuits, 2 in. apart, on prepared baking sheet.
  7. Bake for 10-12 min, or until lightly browned.
  8. Turn biscuits over on baking sheet. Bake an additional 10-12 min. or until slightly dry and golden brown. Remove to wire racks; cool completely.
  9. Melt remaining chopped chocolate (microwave or bain-marie). Drizzle over biscuits. Let stand until chocolate is firm.

for the white chocolate i use a milky bar

i like nigella's. i make without choc and more nuts. bit less sugar too but i do not have sweet tooth. i think the double baking bit is essential for proper biscotti rather than pmd's biscuit version (which also looks very good).
