don't like turkey shall i get duck or goose for xmas?

i find turkey too dry. had duck before but not goose but fancy trying it.

Yum yum. I would love a goose but it is sooooo expensive, unless you can find a frozen one in Aldi or something. The Germans are very into their goose for christmas.

We had a nice duck last year and are likely to be doing the same this year.

Not as much meat on a goose, though, if you have a huge crowd.
And a duck only feeds two.

Depends on the size of your duck! We had a nice one from our wonderful poultry woman at the market that fed four of us and made a great soup.

I hasten to add twas not me that cooked the goose!

IIRC, there were 4 adults and 2 kids and it fed us very well.

I have never roasted either and would be a bit nervous to do it for the first time on Christmas Day (but then maybe I am a bit hopeless!). Practice in advance? Or, there's nothing wrong with a good, free-range, chicken.

Can't comment on duck or goose but we've been having roast lamb with mint and raspberry sauce for the last few years..... with potatoes, carrots, parsnips...

Oh, I'm tempted by goose as well. Do you cook them in teh same way as a duck - hot oven first then lower temp?

There are quite a lot of good recipes for roasting goose online (bbc food do one)

It's not much different to cooking any other bird just takes longer!

I am having a 12 pound goose for 9 adults. They advice that you allow about 1 pound/per person.

Think of all that lovely goose fat for your roast potatotes. God roll on Xmas!!!!!!!!!1

You could get one of those 5 in one bird things, you know, poussin inside chicken inside duck inside goose inside turkey things, and have a bit of everything.

Pre heat oven 190'c

Remove some excess fat from cavity and put some on thighs to keep tender.

Prick skin all over, rub with salt and pepper

Place on a rack in baking tray so excess fat (there will be lots!) can drain off

Cover with foil

9 pound goose will take 3 hours
12 pound goose 4 hours

Remove foil 30/40 mins before end of cooking time to allow skin to crisp

Allow meat to rest for 20/30 mins before carving

We always had Duck. It easily fed 3. Yummy, easy to cook. And fab to roast spuds in duck fat.

I like the sound of the whole stuffed camel though, an interesting change on the old turkey.

If you order your meat from M&S it'll tell you what number o people the joint will feed which amkes it ewasy (they have geese, ducks, all sorts)

What they have stuffed camels in M&S? I really must revisist our local food hall. How wonderful. I wonder how one gets it in the oven.

even the word turducken is mighty silly. I bet they taste nice though.
