Ham with redeye gravy

serves 4.

2 ham steaks, approximately 1 pound each, 1/4-1/2 inch thick
1/4 cup unsalted butter
1 cup water
1 cup brewed coffee
1/4 cup heavy cream or milk

Trim any fat from the ham steaks and sauté in butter until the edges of the ham turn golden and the butter starts to brown.

Remove ham from pan and keep warm.

In the same pan, pour in water, coffee and cream or milk.

Bring to a boil, stirring and scraping the bottom of the pan.

Cook until the gravy thickens. Note that this gravy does not get as thick as a regular gravy. If you want a thicker consistency, stir in 1 tablespoon of cornstarch and another 1/4 cup of milk. Keep stirring as it thickens.

Serve over warm ham with rice.

Ooh redeye gravy, yum. Sounds weird tastes nice. Nappyaddict are you southern US by any chance? Never seen it anywhere else, though that could be my lack of travel!

Nope but looked in the freezer earlier and we didn't have a fat lot but 3 lamb chops (no use when there's 4 of us), mince and some ham. didn't fancy mince again so googled ham recipes and came up with this. tried it and it was yum! i did it with black forest ham.

grits is a dish similar to polenta but somewhat coarser in texture. I actually prefer polenta which probably would get me kicked out of the Girls Raised in The South club - a.k.a. GRITS.

Dh is from New York and he says that my accent isn't that bad until I get around my family - and then he can't understand half of what I say
