Freezable lunchbox snacks…?

I’m looking for ideas for easy homemade snacks that I can send to school with my kids. They have to take a healthy snack for break time and something for after school club. They aren’t allowed anything chocolate and it’s also a nut free school.

Ideally I want to find something tasty, homemade and substantial but without too much sugar. I’ll send them with a piece of fruit for one snack so I only need to find one other snack per day.

I’m on maternity leave at the moment so lots of time on my hands to bake stuff but when I go back to work in a couple of months I would ideally make something on a Sunday to last all week hence the need for it to be freezable.

So these are my quiet specific requirements. All I can think of is a low sugar banana cake but I’m not sure whether to freeze it in slices or whether it’s possible to freeze uncooked batter and bake it later in the week so I essentially bake once on a Sunday and once on, say a Wednesday.

I have the same question about pizza dough - is it possible to make that up and freeze it before cooking it?

Any ideas would be most welcome, and also advice about how best to freeze things too.

You can definitely freeze cake- I freeze cup cakes ( largely so they are not available got me to eat!) and they defrost fine in their lunch boxes. I would freeze the banana bread in slices as you suggest . What about cheese for a snack? BabyBel or similar?

Thanks, I’m also trying to be a little more eco friendly but everything I read says to freeze in cling film and tin foil. I’d rather freeze in a reusable Tupperware container but will that give the cake freezer burn?

No I use Tupperware to freeze them in they're fine, try muffins- savory and sweet and mini quiches/muffins. Look at onehandedcook website for ideas too.
