What to do with left over pulled pork

Cooked some pork shoulder in the slow cooker today and hot pulled pork sandwiches for tea, lovely, but we always have left overs and I never know what to do with it other than have pulled pork and vegetable rice, anyone suggest some more interesting things I could do with pulled pork left overs

You could use them in tortillas and add chopped onion, tomatoes, lettuce, salsa, sour cream and whatever else to make a Mexican style dinner,

Make an Asian style noodle soup with stock, onions, garlic, a selection of vegetables (broccoli, peppers, mushrooms etc etc) noodles, five spice powder, adding the pork towards the end of cooking.

In wraps with salad and blue cheese dressing.
As a topping for nachos with guacamole, salsa and sour cream.

Jambalaya is my go-to for left over pulled pork, the recipe I use uses 175g of it so I freeze it in 175g portions to use it later if there is a lot left over.

Gorgeous in a chilli, in fact I prefer a pulled pork chilli to a beef mince one. Use lots of smoked paprika, black eyed beans and peppers.

Stuffed jacket potatoes - scoop out the cooked potato from the skin, mix with the pork, bbq sauce and some cheese. Back in the oven.Yum!

I normally do pulled pork with roast potatoes or new potatoes and salad and then use left overs in buns with coleslaw

As a pizza topping - I always have pulled pork, peppers, tomatoes, chorizo, and sticky bbq chicken.

On top of nachos or fries with cheese, tiny bits of bacon and thinly sliced/chopped spring onions

Warm is back up for sandwiches

Wraps and salad

Stick in the freezer to use at a later date.

Quesadillas. Put it in wraps with a bit of grated cheese and then about a minute each side

Really nice in bao buns. They take a while to make but you can also buy them, frozen I think. I make them as find it therapeutic.

Great idea. I’m putting this on the menu fir next week. Do you have a particular recipe for the soup @AdaColeman?

No, I don't a particular recipe for the soup, as it depends on what you have available. If you search for "noodle soup" on the Food section of the BBC News website there are dozens of recipes there.

You can use any type of stock, home made, or from stock powder, even a tin of consommé. It's a good way to use leftover vegetables or meat, chicken and turkey work well (Christmas leftovers!).
It can be quite hearty packed with noodles, or a lighter lunch.

Season with appropriate Chinese spices, perhaps add a drizzle of sesame oil, soy sauce, Chinese rice wine (or dry sherry as Ken Hom would say!). Snip on some spring onions as a garnish.

It's a very quickly made tasty dish.
