buffet for Christmas eve

I've got a friend and her family coming round on Christmas eve. I'd like to make a buffet type thingy. Shes a pretty good cook so I want to do something nice I don't think she eats meat on Christmas eve as shes Polish but fish is ok. I don't think shes terribly keen on cheese else I'd just put out a selection of smkoked fish and cheese. I'm looking for little nibbly type things. Can you help me put together a nice selection please?

cold cooked salmon and salad and bread

fish pie (russian kind in pastry) seved cold)

Smoked salmon on blinis with lemon creme fraiche.

Dip large prawns in chilli sauce then wrap in a ribbon of cucumber (use a peeler).

Mini bruschettas.

Those ideas do sound lovely, the cold salmon would look spectacular and I do love smoked salmon too......
So how about...

crusty baguettes (or maybe i should do some homemade bread then I won't have to fret about last minute buying.

Potato salad

Some sort of leafy salad - or I have ordered some beetroots. Some sort of beetroot salad??

Cold salmon

Are blinis easy to make? Or I could buy some and freeze them. With smoked salmon. but perhaps I wouldnt want two salmons - would smoked trout be ok?

like the prawn thing too.

oh I don't know - I shouldnt be trying to plan this while I'm hungry, all food seems like a good idea right now!!

Go to deliasmithonline.com her blinis are foolproof (not suggesting youre a fool!) and you can make them well ahead. Recipe is for big ones but just fry a smaller amount of mix and cook for less time. Failing that go to sainsburys chilled food isle (next to the dips) and buy them ready made!

you could buy some par-baked baguettes and do them in the oven so they are warm - home made would be more impresive but is another option if thingds get hectic.

I have recipe for a russian/georgian bettroot salad. Bake beetroots and let cool. Chop onion / spring onion really finely. grate beetroot. Add mixture of greek yoghurt and mayonaise. Add grated carrot if you feel like it - will stretch it and sweeten it. Crushed garlic is good but pretty powerful. Chopped cortainder or parsely work really well to give it an extra edge. IS much better then it sounds and easy to paly around with.

if you do smoked salmon and blinis serve some soured cream, capers and chopped onion on the side. Authentic touch.

ooooh - I love the sound of that beetroot salad recipe - thanks I might try some blinis before hand and see if they work out.
