I think I saw something a while back like this. But can't find it. So. We're going away to a static caravan for a few days next week. Just 2 of us and the dogs. Obviously don't want to take the entire food cupboard. And will have a chipper one evening I think. There is a restaurant on site but am told nothing exciting. So what could I cook that is easy but tasty for a couple of nights. But won't involve taking or buying a lot of stuff for it? Thanks!

For the first night, I normally take something that I’ve already made and frozen, and it defrosts on the journey e.g. bolognese, curry or tagine.
We also love Higgidy quiches with a green salad. This year we took the pesto and sun-dried tomato one. Yum!
With just the two of you, you could do a stir fry without needing a massive wok or frying pan. Most packets of prepared stir fry veg and fresh noodles serve 2, and you could take a packet of ready-made stir fry sauce too.
Also, burgers or hot dogs

I'm usually a cook, but in these circs I'd hit M&S for some good ready meals, and picnicy bits for lunches.

It's a pain to take the basics of oil/ spices/ dried stuff, and tricky without them. Plus you don't know what kind of cooking equipment you will have there (or not!).

@Zarene we are the same. Very foodie. But exactly I'm not taking everything bar the kitchen sink. Picky bits is a good shout. Think day times will be out and about with the dogs so will get a good lunch somewhere. Then yes burgers or hotdogs by a PP also sounds a good idea. Thanks ladies!

If I was on the coast I’d buy fresh crab and do it with linguine, garlic, chilli and cherry tomatoes.

I'm a lazy shit so I would get a few Cook meals. Not super cheap but nicer than the average ready meal.

I would take chilli and a tagine with me, with Rice for the chilli, couscous for the tagine.

Quick cook while tbere:
Steak
Homemade burgers
Stir fry
Carbonara
Salmon
Corned beef hash

I'd also quite happily have a full English for tea but DH wouldn't !

Thanks for all the replies. Now the time is nearing am also wondering what else we need to take. Washing up liquid etc? Juice tea/coffee?

Caravan stew. Tin of stewed steak, tin of carrots, tin of peas, tin of potatoes. Mix, heat and serve! With posh bread if you have some. Or pasta bake. Morrison's do an ok packet sauce for tuna pasta that's quick and easy and nice with a bagged salad.
