You need to cut off all the visible fat off any meat. That will cut down the amount that will render down into the dish. Hopefully that will help.

It seems they are a greasy cut. You could prepare it one day, chill overnight and take off the set fat and then reheat it. A bit more faff, but it will make for a better flavour.

If the oxtail is too greasy, then why not try making the same recipe with brisket which tends to be much leaner?

I do pulled pork in the slow cooker sometimes and this is the best way I've found to get the flavour and texture without the grease. Otherwise I tend to use more lean/tough cuts - slow cooking is absolutely idea for less fatty meat because you're adding liquid and getting around the toughness that way.

Oxtail is very fatty - 70% fat. I would also chill it, scrape the fat once cold and reheat.

Oxtail is very fatty. You could do as others have suggested and chill, remove fat and reheat.

I find lamb n the slow cooker often gets a lot of fat released and my trick is that I take a couple of layers of kitchen towel and gently pop on top after it's done. It's much easier than trying to spoon off the fat which never seems to work so well in a slow cooker.

Might try the kitchen towel trick the next time.
Went down very well,so will be making it again.

Glad it was tasty and I hope the kitchen paper/towe trick works for you. I get quite ill if I eat too much fat and DH simply won't eat anything greasy at all so it's been quite helpful.

Oh god oxtail is the worst for fat. After a few swimming-in-grease experiences I don't stew oxtail, pork belly or lamb to eat the same day anymore - like @idontlikealdi said above, I have to put it in the fridge overnight and scrape off all the fat the next morning when it's cold. Otherwise it's just too much animal fat and I can literally feel my arteries hardening as I eat.

Put a couple of slices of bread on the top of the fat layer after a few hours, the bread will soak up the fat.
Then you can -fry off the fat soaked bread for breakfast- throw away the greasy bread and enjoy a healthy stew.
