Your best crumbly fudge recipe please

I’d like to have a go making fudge. I’ve found a lot of recipes on the internet but it’s difficult to know which will make crumbly fudge and which will make squidgy fudge and which are reliable recipes. Im after the crumbly variety. Does anyone have any recipes? Thanks.

Nigella's Russian fudge is amazing. You do need to beat it for ages though to get it crumbly but it's worth it

Tablet is the best. I haven’t made any for ages and I am going to tomorrow. Sugar in a square but oh so good.

Thank you so much for your replies! Lots of fudge for though there. I’ve read about Scottish tablet and it looks interesting but I’m not sure it’s what I’m after. I remember having crumbly fudge on trips to Devon many years ago. I think I bought it at Roly’s. It was definitely fudge but it was also definitely more of a crumbly fudge. It was delicious. I will look at every suggestion, thank you.

The tablet recipe I posted says the crumbliness is created by "seeding" the mixture with crystals scraped from around the edge, and then shows the crazing pattern on the fudge where it's crystallising. I know you might want a crumbly fudge rather than a tablet, so if you do find a fudge recipe that looks good, maybe look to see if that has a similar technique going on, or a similar look to the finished fudge? I'd also avoid American recipes as they tend to mean something different by "fudge"…

Thank you ClumpingBamboo, that’s a really good tip. I’ll certainly keep a look out for that. I think I may try the Nigella fudge first and go from there…

This is the best homemade fudge I've ever eaten
*
¼ pint water*
6 oz evaporated milk
1lb granulated sugar
3 oz butter

2/3 large block of white chocolate

Melt chocolate over hot water and cool

All other ingredients in pan and heat slowly until dissolved
Bring to boil and boil until “bubbling mud” stage and flecks of caramel are appearing.
Remove from heat and beat in vanilla extract and then beat in melted chocolate.
Beat well and pour into buttered tray.

I have two bags of tablet I've just bought back from Scotland intended as presents but I may end up keeping it ourselves!

Thanks for the tablet recipe, I think I'll give that a go to savour our memories of our holiday.
