I'm not a huge fan of celeriac. I'll eat it but I don't love it.

Consequently, I hadn't got around to using the large celeriac that came in my veggie box last week.

Today I've been sent another!

I have tried and failed to offload generously offer it to friends.

What would you do with two bloody great celeriacs? Obviously I won't use them both up in one go. I'd appreicate your genius, brilliant, delicious celeriac recipes to inspire me. I get stuck after celeriac soup (bleh) and coleslaw (meh).

And, would it be too wierd to take one of them to toddler group tomorrow and see if anyone wants it?

Ooooh i love it. I either chop into smallish bits and chuck in to the over with other veggies to roast or blitz with other veggies in food processor and bung into bolognaise. If you are not keen make it part of something else rather than the main feature ie celeriac soup. best of luck, i would take one off your hands!!

I like it just boiled and mashed with loads of butter and black pepper. You could add it to mashed potato if you wanted to dilute the flavour a bit.

celeriac rates as one of my top 5 foods
i like it grated raw with a smidgen of mayonnaise/yoghurt and a jacket spud - bLISS

mashed with tatties is nice to but a bit more bland ..

I've never tried this but I bet celeriac and potato mash would be good as a fish pie topping.

Boil with potato and apples - mash the lot with butter and salt & pepper, serve with sausages/casserole/whatever you fancy!

LOVE celeriac. Am delighted to get one in our box again. Best done roasted with fennel , ordinary potatoes and few sprigs rosemary imo.

Chop it into roast potato-sized pieces and roast it along with the spuds and joint of meat. Lovely.

If you make your own chips add some celeriac ones too..they're lovely as is potato and celeriac mash

For future reference - slice thinly, layer in buttered dish with onion and also potato if you like, half/three quarters fill dish with stock, dot with butter and bake in hottish oven for 30/45 mins.

Habbibu that does sound good.

We used one chunked and roasted with lots of other veggies. We used the other mashed with carrots to go with sossies and endemame beans.

Bet you I get another on wednesday...

Now swede I can cope with.

Think my timing might be a bit out - bake until tender probably better.
We've all been laid low with a bug, so I'm in a veg box struggle right now. Have 2 pointy cabbages, 1 red cabbage, broccoli and sprouts (blee) in the fridge, new box comes Wed and I don't feel like cooking! Blah. Will straighten myself out. I sense a big coleslaw coming on...

So what do you do with swede? I just keep chucking it in stews.

Celeriac gratin:

peel and slice celeriac thinly
wash and slice two large leeks
finely chop 4 cloves of garlic (or more if you want!)

In a casserole dish, layer celeriac, garlic and leeks - seasoning as you go

When the dish is full, pour over the top 284ml double cream (a large pot), cover the dish and cook on high in the microwave for 20-30 mins (until all the slices are soft.)

Then cover the top with grated cheese and finish in the oven.

With swede, boil with carrots, then puree/mash with lots of butter and salt/black pepper. Lovely!
