Pre-Christmas holiday cookathon - need meat (not mince) dishes that freeze well

Who has fantastic freezable casserole type recipes? No pork - chicken, game, beef, veal. Something to heat up in the oven and serve with rice and a green salad.

hungarian goulash is very nice with rice ,you can make it with beef or pork

Hmm, not keen on chilli (not very French, for my fussy French family...).

Something different with chicken would be good... ie not mushrooms/bacon/cream/almonds/wine... but what?

Anna - surely the french invented meat and fruit? Ie pork/rabbit and prunes, mackeral and gooseberries, Duck and orange, errr lots of others?

Do they like curries of any description? Or Thai? Delia has a great recipe for chicken with lime/coconut/coriander, not sure how it freezes having never tried, but it's pretty quick to make from scratch if you're pushed for time.

SantaBe - thank you . Not entirely sure that olives will be OK with stepsons - must check . Fortunately the cookathon won't be for a week or so so I have lots of time to plan out the recipes and check with all concerned that ingredients pass muster...

Belgianchox - yes, curries and Thai are fine if very mild. I do Thai green curry quite often (a non freezable recipe but very quick, from a Blue Elephant packet).

Some nice ideas here. I have nearly emptied my freezers (I have a huge american style fridge/freezer in the kitchen, the old fridge/freezer, from before the kitchen was done, down in the garage, and a small chest freezer in the garage), so plenty of space to do these recipes.

I've just got back from the shops, sniffing around to see what's around .

Anyway, just sitting down for a second before making supper - bought teeny-weeny lamb chops and am going to cook them with pancetta, garlic, rosemary, white wine and a bit of tomato. With some roasted ratte potatoes.

Sounds yum. I miss lamb chops. Not easy to get them here in Budapest.
