Plum Cake

I am trying to find an easy recipe for plum cake as have plums in the fridge that need to be eaten - can't find one so thought can I just make a normal sponge cake and add chopped plums into the mixture before putting it into the oven?

Moondog looked up the recipe for tatin and it looks quite complicated for a very new cook - can just about make biscuits lol

Ooh Mercy Plum Cobbler might have to make one of those at the weekend

Right then, here we go:

1lb fresh plums
1 rounded teaspoon ground cinnamon
10oz plain or wholemeal flour
5 oz porridge oats
1 level teaspoon salt
8oz butter
4oz light brown soft sugar

1 baking tin (approx 6 x 10 inches and 1 inch deep) lightly greased

Preheat oven 400F/200C gasmark 6

Cut the plums in half around and through their natural line, give a little twist to separate the halfs, remove the stones and cut into thin slices. Place them in a bowl and toss around with cinnamon.

Mix flour, oats, salt in a mixing bowl.

Melt the butter and sugar in a saucepan on a low heat, stirring occasionally. Then stir this into the oat mixture. Mix (first with a wooden spoon and finish with your hands)until you end up with a lump of dough.

Halve the dough and press one half into the base of the baking tin, like a wall to wall carpet. Press it down firmly.
Scatter the plums evenly over the surface, then top with the remaining oat mixture, pressing down firmly again.

Place tin on the centre shelf of the oven and bake for 25 minutes, or longer if you like the top to be really crispy.

Remove tin from oven and allow to cool for 10 minutes. Then mark it into squares. Serve warm with cream, custard or icecream, or leave to cool completely in the tin and serve cold.

My dc love a square of these in their lunchbox!

DKN, I made that recipe last weekend but without the walnuts and it was DIVINE. I've been longing to make another one. It was delicious warm with cream .
