1 veggie 2 carnivores HELP

I've just started a meat free diet (I'm on week 3)but I'm also cooking for my husband and teen son who still eat meat.
I'm happy to do this but I'm wanting recipe ideas so we look like we are all eating the same thing.
I'm good at doing a veggie lasagna alongside a beef one, same with spaghetti bolognese but more ideas would be greatly appreciated!
Are there any cook books on this subject?

I make a roast with Jamie’s hazelnut and mushroom stuffing for me and the meat eaters get some of that with roast chicken.

You could shred the leftovers in a mushroom curry the next day after serving out your own portion.

I often make a veggy pasta dish and have some olives and Parma ham on the table alongside it so the meat eaters don’t feel like their missing out.

I wouldn’t kill myself making 2 different meals. List make the veggie versions - lasagne, paella, curry etc. When the meat eaters need their fix - make a ramen (salmon for them, tofu for you) or if they want steak - roast potatoes, veggies and cauliflower cheese for you, pasta Napoli and stir in some tuna into a separate pan of the same sauce towards the end, etc...

That's exactly our household.

Tonight, we're having sort-of fajitas. I cooked a massive veggie chilli. I'm having tortillas stuffed with veg chilli and griddled red peppers with a sprinkling of grated cheese and some plain set yogurt (instead of soured cream.) The others are having all of the above plus adding some cold roast chicken to theirs. It's one of DH's favourite dinners

DH and I are vegan, our 3 kids are meat eaters.

I try to minimize the seperate meal cooking as much as possible. I try to have the base (usually carbs) of the meal same for everyone and then tweak the protein.

mash - we all have vegan mash and kids will have sausages, we have vegan sausages

Ramen - we all have noodles, kids have meat and we have tofu

Pasta - we will have a veg or lentil sauce, kids will have bolognese

Risotto - make one big pot and add meat at the end for kids

Pizza - make the same base but tweak the toppings

It's a nightmare cooking separately every night and as your DH and DP won't expire from not eating meat every dinner time I'd alternate it. 3/4 days a week you all eat something veggie together and the other 3/4 nights you do something where you all share sides or main components and then they get meat and you get a veggie alternative

Ie
-Roast dinner with meat for them and meat alternative/nut roast for you.
-Depending on whether you're veggie or vegan, Halloumi or mushroom burger for you and beef burger for them.
-Beany fajitas or veggie risotto with added leftover roast chicken for them.

Do the same meal but with the protein bit separate.

Something like bangers & mash with meat sausages or vege sausages, chilli with meat mince or soya mince

Talking of vege sausages, I bought some Heck vege sausages in a buy me free to push my Waitrose spend to £10.

Sent off the recipt and got a cheque for the amount + postage. Good stuff. Thanks Claudia from Heck.

Toad in the hole is adaptable . Just cook one tray with veggie sausages, and one with meat sausages, without any real extra work. You only need to pre cook the meat sausages.
