Help, I need ideas

I have 3 adult ( 24, 22 19) DCs. Two are vegetarian, one won't eat cous cous, goats cheese, or mushrooms. Three of us are not vegetarian but one won't eat beans/pulses but will just about tolerate small amounts of lentils ( so not strictly no pulses but wouldn't enjoy a lentil based dish, but strictly NO beans from tins, French/runner beans are fine). DH is low carbohydrate.
We are going on holiday to Scotland. We do have "good family times" when eating together.
I'm not without blame. I can't eat brassicas without vomiting.
What would you recommend?
I have gone down the road of different meals, but, fgs, we're on holiday.
Its a challenge, our 3 adult DCs want to come on holiday with us, that's precious, but I just don't know how to do meals anymore.
It's making me start to feel resentful and I don't want to feel that. What on earth can we all cook that caters for us all. They are all willing to take it in turns to cook. Ta!

Roasted veg lasagne with salad and garlic bread (DH can skip the bread). Stir fries with added meat or prawns for those that eat them. Roasted peppers stuffed with ratatouille and salad. Fajitas with veg and meat options (DH can use lettuce wraps if he wants to drop the carbs).

Well, why's it down to you to cater to their every dietary whim? Either get them all together and sit down to plan a menu that suits you all, or create a group chat for them to contribute ideas. And make sure they all take turns to cook it!

You're right, and they will all cook, I just don't want the whole holiday to be taken up with thoughts about evening meals. It's about the only time we all get together these days to chat, and it's NICE!
You're right though... get them to plan meals, but we are 25 mins from a shop in Scotland so it does need some forward thinking.

Mediterranean vegetable bake (or stew) served with rice or pasta separately. You could add a few lamb chops or slices of gammon for anyone who wanted meat.

Salade Niçoise but serve bowls of the ingredients separately, so everyone can choose what they want.

Various curries, rice, flat breads so everyone an choose what they want.
You could do similar with a Greek night too.

DHs idea of a meal is to ignore DS's bean aversion, cook meat in a casserole and then fish out the meat....no one feels much thought after in that situation.

Houmous, pitta bread, olives as a starter
veg and halloumi kebabs
lamb kebabs
savoury rice (cooked in veg stock)

Try a bit of a Spanish flavour, with gazpacho to start (no cooking, only chopping) then Spanish omelette slices served with diced potatoes roasted with some herbs, if you’ve not made these before, look up Greek roast potatoes (yes I know, that isn’t Spanish!). You could add trays of oven roasted chicken thighs and vegetarian sausages.

Have you looked into getting an online supermarket delivery to the holiday venue, or is it too isolated?

Ok, eldest is home tomorrow. We will sit down and plan because there's no way I want to spend our holiday devoted to planning evening meals each day.
It's a good time and I love the evening meals, thank you for all your suggestions. They are all willing to pitch in, they just all come with their own agendas.
