Rhubarb gin recipe?

Has anyone got a reliable one please? I've got a lot of rhubarb to use up and the weather isn't very rhubarb crumble imo Grin

I stuck some in a bottle of vodka once and it wasn’t great. I just buy it ready made now.

For your rhubarb glut - slice the rhubarb, place on a lined baking sheet, sprinkle with brown sugar and bake.

Fabulous with vanilla icecream and crushed digestive biscuits.

I just weigh the rhubarb, add about the same weight of sugar then split it between a litre of gin. Store till ready about 3-4 months.

I make it into a gin or vodka liqueur using my crème de cassis recipe for method and quantities. It's amazing sipped chilled and neat. Syrupy but pokey. Beautiful colour too!

Also, as a better summer pud than crumble, we make it into a fool or Eton mess. It also gets baked with crystallised stem ginger and sugar then spooned onto yoghurt. Any spare is baked with minimal sugar and frozen.

I do the same method as Petrakanian. Same amount of sugar as fruit then add the alcohol. Sometimes add some fresh lemon and ginger to the mix. Leave it for a year if you can.

Just seen this! Don't know if you've used all your rhubarb up now, but if not, DH makes amazing rhubarb gin, and it couldn't be simpler.

400g rhubarb, washed and chopped
1.5 litre gin (cheap gin is perfectly fine)

Pour the gin into a bowl - preferably not plastic or metal - and add the rhubarb. Stir, then cover

Leave for 3-5 days, stirring occasionally.

Then filter back into the gin bottle.

And that's it. No need to add any sugar - if you do, that stops it being gin IMVHO, and makes it more like a liqueur.

As well as working well with tonic, it's also lovely with ginger ale.

@BIWI - I'll try that actually, since pulling all the excess rhubarb has made it grow even more so I can try both types and compare! Thanks! Might give the jam a go too - thanks all!

I made rhubarb gin for my wedding favours last week

No particular recipe. Rhubarb, a big pour of sugar and some lemon juice in a killer jar

Leave overnight to let the juices free. Tip in gin. Swish every few days for 3 or 4 weeks

I add a few strawberries to gin. Makes it nice and pink.
Also make rhubarb and strawberry jam. It needs pectin so I add a good splosh of bottled lemon juice.
