Summer lunch for fussy teen

My daughter is very fussy, she wont eat school lunch. Normally I make homemade soup or risotto but shes gone off risotto and it's abit hot for soup.

She's never been into sandwiches and for a while had cheese rolls everyday but she then stopped eating them.

Now she is having humus, crackers and carrot sticks.

Any ideas for something similar to this? Or any pasta salad ideas?

Calzone - I often make the dough in my bread maker, then freeze the calzone for lunches

Noodle salads - I often do these with soba noodles, bok choy, bean sprouts etc and marinated tofu. Or go Vietnamese style with rice noodles, shredded chicken, cucumber, carrot, coriander and nuoc cham

Oh and if she like hummus, maybe try homemade falafel with hummus, pita bread and salad.

Is it just sandwiches that are a no or does that include all bread products? Things on toast? Toasties?
Are you looking for cold things that can be eaten out and about?
Tuna pasta with peppers, spring onion and sweetcorn. Either in honey and mustard dressing or mayo.
Fritata (good hot or cold)
Cheese and crackers, pickles, grapes, apple
Potato salad, with a yoghurt based dressing, chives, red onion, bacon if she likes it.
Cous cous with harissa roasted chickpeas, dried apricots, and roasted veg.

If hot is ok than jacket potatoes and toppings.

The age of the daughter and if you are talking school/home would really give this some context. If a primary aged child I would do all the things suggested above. If a teenager, bread does seem generational. My teen has things like sushi, scotch egg, pasta salad or if at home, ramen noodles, things like 'Bol' pots, pizza pockets, grapes, mango etc. The common theme is it has to be cooked in one minute despite him having nothing to do all day!

Cold pizza? I used to make a pizza (packet base mix to save time) and cut it into four, and that did two day's lunches. The other days were a pasta or rice or potato based salad with nice bits added - think olives, crisp bacon bits, chunks of chicken or tuna, gherkins, avocado, croutons...not all at once, just a few, but whatever was wanted. I also make fritatta and have that cold. 4 eggs and a whole load of veg and cheese gives a really good sized fritatta to chuck in a tupperware box with some veg sticks and a pot of dip.
