BBQ desserts

It's been a long year but we have company for the first time in what seems forever. I've got easy salads and lamb for the BBQ, but I'm looking for dessert inspiration.

I'm not a bad cook, could run to two desserts so one could be chocolate based?

What are your favourites?

Pavlova.
The other is one my mum makes and I'm sure it's like a 80s recipe but it's so good.
It's a packet of ginger nut biscuits dinked in coffee and some kind of liqueur and you assble it on a log shape. (The biscuits become soggy and squish together) and then you cover in cream. Hmm I. Make this sound horrible but it is tasty!

Or maybe key lime pie.

Eaton mess!

gogohm · 14/07/2021 23:56

How much time do you have? If I'm running short I buy large pastry cases (or bake 2) then fill one with chocolate ganache with grated chocolate on top and one with sweetened mascarpone cheese spread across topped with fresh fruit.

dotdotdotdash · 14/07/2021 23:57

Profiteroles. Easier than they look to make and always a crowd pleaser.

Cheese board, berries and cream
Eton mess
Ice cream with smarties/m&ms, and mars bar sauce

Wrap pineapple slices with brown sugar and rum in foil and put them on the bbq while you eat the meat. Serve with ice cream. Sooo good.

Place a banana still in its skin on the embers of a barbecue having run a knife down the inner curve. Allow the skin to blacken and the inside go slightly mushy. Remove from barbecue, add single cream and a favourite liqueur to the flesh and scoff.

I put a strawberry and a small square of brownie on a cocktail stick and make lots of them. You can also get trays of chocolate you can melt straight on the bbq; useful for dipping.

Something easy? Ice cream or sorbet, cheese board and that lovely sounding pineapple and rum dessert posted above.

Cheesecake- classic bbq dessert

SirenSays · 15/07/2021 22:18

I always make keylime pie, it's so refreshing after a bbq

didireallysaythat · 15/07/2021 22:45

It turns out I'm not a dessert person. I've never made a summer pudding, nor a meringue (probably because I don't like them!), I've no idea what a keylime is, but I can make a mascapone and ricotta baked cheesecake so I do that. I haven't made choux pastry since school (it was easier than it looked) but I don't think I'm up for piping anything. I like the idea of brownies and strawberries - that might be the winner.

Thank you all.

Brownies cut into small squares (make the day before or buy); mixed fresh berries; sliced tropical fruits (banana, pineapple and mango with halved passion fruit);
bowl of chantilly cream or creme fraiche, tub of vanilla/chocolate/coffee ice cream
Tub of bought mini meringues (Aldi or M&S)
Easy, can be prepped in advance, fussy eaters can pick and mix, brownies and meringues don’t need fridging.
Add a cheeseboard (also assembled ahead of time) and will please most people

Justmuddlingalong · 15/07/2021 23:05

I've cream bomb covered in slices of Swiss roll. 😋

Justmuddlingalong · 15/07/2021 23:05

*ice cream

quince2figs · 15/07/2021 23:07

All the above can be bought from M&S including ready prepared fruit 😀

Eleoura · 15/07/2021 23:07

@didireallysaythat- Do you mean a dessert which can be cooked on the actual BBQ, or, just one to serve when eating a BBQ meal and cooked elsewhere?

didireallysaythat · 15/07/2021 23:13

@Eleoura probably the latter (although I do like the sound of pineapple on the BBQ) - I'm not sure I can face live cooking two courses.. .

I immediately thought of pavlova and Eaton Mess, which I see suggested above.

If you want something lighter, berries with basil sorbet is refreshing.

I think with a BBQ, something cleansing and fruit based goes well.

If you want something "cooked", S'mores are fun, social, and something I think of when I think of campfires/BBQ. Melted marshmallows and chocolate on digestive biscuits. www.goodto.com/food/how-to/how-to-make-classic-smores-563263

Horehound · 16/07/2021 08:56

The the "key" of key limes is a reference to the Florida keys maybe
It's an American dessert but very nice
