Try this:

Chop up a small onion, one courgette and a few mushrooms. Fry them, with garlic if liked. Add one tin baked beans, a dash of soy sauce (if liked) and serve with pasta.

Very veggie, very quick, very cheap and very yummy.

Nice name, by the way!

lentil soup with coconut milk, sausage casserole with veggie sausages, pasta pesto, spanish omelette, wraps with cheese and salad

Pasta cooked and mixed with passata and maybe some chopped peppers and cheese sprinkled on.

Cooked pasta combines with salad dressing chopped peppers, cucumber, tomato, peas or sweetcorn served cold. My family loves this.

Jacket potatoes with cheese or beans.

Cheese and potato pie, mix mash with grated cheese, pile into a dish, sprinkle more cheese on top and bake till golden. Serve with veg on the side.

Quorn frankfurters wrapped in bread with sliced cucumber on the side.

chickpea curry - fry an onion, add a spoon of mild curry powder and cook for a few seconds. Add a tin of chickpeas and a tin of tomatoes. Cook for 15 minutes and serve with rice/nan/dollop of yoghurt/mango chutney or anything else you have at hand. My ds 4, loves it and he is quite a fussy eater.

Potato Stuffed Mushroom Caps
Ingredients:
2-3 mushroom caps per child, depending on appetite
mashed potatoes
margarine
grated cheese/soy cheese
Instructions: Remove stems from mushrooms and wipe caps with a damp cloth to remove any dirt. Brush with margarine and place bottom side up on an oven tray. Fill each mushroom with mashed potatoes and top with cheese. Bake for 8-10 minutes (or until the cheese is browned) at 425°F /220°C.

Note: This recipe sounds gourmet, but it's really very easy and a great way to use leftover mashed potatoes.

I can say that Badhair's recipe is very more-ish. We have it quite a bit now. (She posted it a while ago, also --- thanks BH!!)

My dd used to like mini-quiches. Use ready-made pastry or make your own and line the hollows in a bun/muffin tray.

Fry up any combination of vegetables that the child likes - diced mushrooms, celery, leek, peppers, onions, etc, for three or four minutes until they soften. Put a spoonful of the mixture in each pastry case.

Beat together one egg and a tablespoon of milk, pour into the pastry cases and top with a sprinkling of grated mild cheese.

Bake at GM6 for about 15 - 20 minutes.
