Feeding a group on holiday

We’re off on holiday with friends in a few weeks. 8 adults and many children! We will do a children’s tea earlier and then take turns to do dinner for adults.
Has anyone got any delicious, quick recipes that jump to mind? I feel like I’ve drawn a total blank!! No idea on weather which I feel affects the food vibe so much!

I’d do stuff that’s easy to do in bulk
Curry, chilli, Bolognese, stews etc otherwise it’s just an ordeal

Last time we did this, I cheated and made a chicken casserole using a Coleman's or Schwartz packet casserole mix (doubled up). So easy - just chuck in frozen casserole veg, chicken (or turkey) pieces and bung in the oven and crack open the wine while it cooks Wink. Serve with lovely bread or mash. Might be worth taking your own casserole dish.

(I actually cooked it the night before we left as we were first up to cater on the first night. But it literally takes ten minutes from fridge to oven.)

I snagged the first night, so bulk cooked bolognese at home and froze it. Cooked that night with pasta and grated cheese. Kids had the same a couple of hours earlier.
Couid do similar with a chilli if that would be more to the groups taste?

Giant tray bake -

This time of year I’d go for little new potatoes, rough chopped root veg, cherry tomatoes, and chicken thighs. Glug of oil, good sprinkle of salt and some rosemary, shake it all together in a big roasting tin or two and shove it in a hot oven until done. 40 minutes if big pieces less if smaller. Gravy.

More expensive but yummy. Big side of salmon or salmon fillets. Upside down in a roasting pan, bit of salt and olive oil on the skin. Big handfuls of asparagus alongside, in the oven 25-30 minutes (longer if the side is uncut) and serve with rice and Hollandaise sauce.

Readymade pizza dough, roll out to cover 2 rectangular tins. Good one for the children’s tea too - just put a massive pile of different toppings out. Children can shape their own dough then pick their own toppings. For the adults you can do 2-3 big rectangular pizzas - I like to do one with garlic oil, Boursin, courgette strings and mozzarella, one with tomato sauce, mozzarella, ham and artichoke hearts and one with bbq sauce, sweet corn, precooked chicken, red onions. But pick your own favourites obviously. And add a giant bowl of mixed salad.

Fish pie sounds faffy but doesn’t need to be - big pile of fish pie mix and a bag of frozen prawns. Add peas and hard boiled eggs if it needs stretching. White sauce, cheese sauce or parsley sauce just as you wish. And top with a pack or two of frozen mashed potato. Bake.

Sausages good for all ages and if it’s cold turn them into toad in the hole.

Baked potato bar again pleases pickier eaters - tuna, ham, beans, cheese, coleslaw, chilli, whatever, just dig in.

If every family brings a cake and a carton of ice cream, add local fruit and you’ve got mix and match puddings sorted out.

Bacon and egg baguettes work nicely as a production line quick meal rather than a sitting down together one.

Burgers are good too. Can be bbq if weather good and you have the inclination or just ovened and slapped into nice rolls with fried onions and salad and wedges/chips/potato salad depending on the weather.

Throw in peppers, onions, courgettes, butternut squash, small potatoes and put chicken thighs and pieces on top with olive oil. Herbs and spices. Bung in the oven. Happy days.

In this situation Id make something in advance to freeze and bung it in the freezer til you get there. Do some of the kids teas that way too!

Lasagne, mac and cheese both served with salad and crusty bread
Fajitas, stretch to make burritos by doing rice
Lentil dhal with rice and naan
Barbecue some sausages and do rolls, salad and fruit

Mexican theme works well (tacos / burritos / fajitas). Just provide plenty of different fillings and sides (refried beans, seasoned rice, sour cream, lettuce, cheese, guacamole, salsa, pico de gallo). Then everyone can just make their own.

I'm twitching reading this - been there done that - never again Grin. Honestly though a night each, a left overs eat what's in the fridge night and take away/ eat out once or twice. Scale up family meals x 4.

I like cooking but not in a holiday cottage kitchen which will probably have only two tiny saucepans and no oven dishes, and one blunt kitchen knife, despite having beds for 20 people....

Thanks all! Some super ideas. Am leaning towards Mexican, because who doesn’t like Mexican? I really like the tray bake ideas too. Could bring baking trays from home too Grin.

Terrible kitchen is why I like traybakes and big pan pies - fish or lasagne or similar - minimal kit needed!

Chicken fajitas - you can do the chicken, onion peppers and spices in a tray bake style so that may be easier. Serve with all the extras like grated cheese, guacamole, sour cream, salsa, refried beans- maybe even nachos.

I make chilli in advance and freeze it. Not too spicy but take chilli flakes to add to it when served.

Lasagne, but I'd precook and freeze the ragu at home so all you have to do on the day is make a bechemel sauce and layer it up. I'd do spag bog for kids' tea that night too.

We often do a couple of roast chickens, then roast a further couple of chickens for curry another night.

How big is the oven? Can you roast a couple of chickens and do roast potatoes and veg in the oven too?

Remember to take a proper sharp knife with you, if you don't want to go mad trying to cook for that many. Holiday cottage knives are the worst.

You could make a lasagna beforehand and freeze it.

We did a holiday meal yesterday. Barbecued chicken, Caesar salad, a chickpea/feta/tomato salad. Eton Mess with local strawberries for dessert. It went down well and was easy. Marinaded the chicken ahead of time.

Anything that can be slow cooked

  • curry
  • pulled pork or chicken (bbc good food has good recipes with few ingredients)
  • gammon then serve with chips, salad, pineapple or egg
  • beef stroganoff (again Bbc good food for recipe)

Then not slow cooker but quick from bbc good food

  • baked tomato & orzo
  • chicken & chorizo jambalaya
  • chicken pasta bake

I don't work for bbc good food 😂 just use the app a lot as you can save recipes so helps meal plan for the week

The thing I hate about holiday cooking is finding something that doesn't need a load of ingredients that's a pinch of this, pinch of that so you either have to bring it or buy it!
