People coming for dinner tomorrow and one can't eat wheat. Usually I'd make something the night before like a trifle but they all have sponge....any suggestions for something simple?

meringue with fruit and cream/creme fraiche/greek yogurt.

the nigella party cake
[rummages]
Whisk 6 egg yolks with 200g caster sugar till creamy, fold in 200g ground almonds and the zest of a lemon.
Whisk 6 egg whites in a anotehr bowl, beat a spoonful of white into the yolks and then fold the rest in gently.
Pour into a 1.5l tin (she uses a brioche tin but I don't have one so use a ring mould thing) and bake 1hr 160 C
Serve with fruit, or fruit compote (ie bag of frozen fruit cooked in saucepan till mushy) or coulis (as above then liquidise or sieve)

or flourless choc cake thus or similar

or, in a peculiar collision of recipes, a Nigella flourless choc cake

Yes, second the flourless chocolate cake recipe linked by MrsBadger. I have a similar recipe (bigger quantities) which is very popular with my Montignac diet obsessed BIL

Looks great....is the springrelease tin essential?

this is really good too

Anna8888 · 23/11/2007 15:34

I use a silicone pan and line the bottom (not the sides). I put the cake in the refrigerator for 24 hours before serving and then turn out onto a plate, peel off bake-o-glide and turn out onto a fresh plate.

Thanks everyone. Do you think I could use port instead of cointreau....don't really keep liqueurs in the house and can't see me getting to the shops tonight?

No, I don't. Just leave out the alcohol.

robin3 · 23/11/2007 15:51

Thanks
