Easy low sugar breakfasts

Looking to have some decent breakfasts with minimal sugars - not particularly to lose weight, just for health and fillingness. I love eggs, but poaching, scrambling, boiling, or cooking of any kind is just not going to happen in the morning with work and DC to think of. Overnight prep could work though.

Currently I would usually have no-added-stuff muesli with unsweetened soya milk, or sometimes fruit and low sugar granola with unsweetened plain soya yoghurt. I like porridge but for some reason I find it the opposite of filling? I don't eschew dairy but I do prefer nondairy alternatives if possible. I tried overnight oats with some fruit and vanilla essence and found it a bit meh.

Any suggestions?

I'm a great fan of eggs. Scrambling takes c.40secs in the mic.
Or hard-boiled, mashed with mayo the night before, on toast?

Frittata, made with whatever veg & cheese/ham you fancy. Keeps for several days in the fridge, eat it cold or cover a portion & heat briefly in the mic.

apple and banana muffins or cheese, egg and bacon muffins? actually with a basic muffin recipe you can add any thing and put them in the freezer.

I could try the microwave egg thing. Never done that before. With some kind of complex carb, possibly.

Not bacon though, defo. Hate bacon. Can't handle too much fat in the morning.

Have been wondering if I can do anything with natural yoghurt that doesn't involve fruit.

Wholemeal toast with melty butter and marmite Smile

My favourite !

Most mornings I have Vogel seeded toast, with no added sugar peanut butter. I eat at 8, have a Nespresso with it and never get a tummy rumble before 1pm.

Other ones are Alpro greek style yogurt with no added sugar Alpen and some blueberries. And I buy protein shake mixes, they are really handy if you're in a rush. I buy USN Diet Fuel and they are really low in sugar. I add half water and half soya/oat milk.

Wholemeal bagel with smoked salmon and cream cheese
Avocado on wholemeal toast sprinkling of chilli flakes if who want the kick in the morning.

Avo is definitely a possibility! It's an indulgence, but eh. Never stops DH :)

I like nut butters as well.

I have natural full fat Greek yoghurt with a handful of oats, fruit (usually grated apple, chopped pear or some thawed frozen berries), a really little drizzle of honey and a sprinkle of cinnamon. I am mostly avoiding dairy because I think I've developed an intolerance, but I tolerate proper yoghurt really well (apparently the enzymes in live yoghurt help you digest it).

I find porridge non-filling too, OP. Anything too high in carbs with no protein in the morning makes me ravenous by about 10:30!

At uni, I used to make scrambled eggs in the microwave, in a mug. Throw in tomato, mushrooms, spring onions, cheese or whatever you have. Whilst that is in the microwave, cook some toast. Done!!!!

Otherwise low/no sugar skyr or Greek yoghurt, walnuts or chia seeds and fruit.

Stumpedasatree · 01/07/2021 21:45

But scrambled or fried eggs takes a couple of minutes in the morning. Chuck a pan with some butter on to heat, add the eggs, stir or flip and they're ready. Same time as microwave.

DukeofEarlGrey · 01/07/2021 21:52

I often have a low sugar smoothie from a pack with added protein powder. Not cheap but very quick, easy and more filling than porridge to me.

Otherwise would also suggest microwave scrambled eggs, avocado on rye toast or Greek yoghurt with nuts and seeds.

BuffySummersReportingforSanity · 01/07/2021 22:01

Yoghurt with nuts and seeds is definitely a good shout. I'm wrangling two young DC in the morning, and a pan on the stove just wouldn't really mix well with the general chaos.
Possibly I will experiment with whether you can mix nut butter into more things?

I sometimes make overnight oats with chia seeds and almond milk, then in the morning add fruit and nuts. I agree it can be a bit meh unless you add loads of flavour.

We also sometimes have beans on wholemeal toast, or mashed avocado on wholemeal toast/bagels. You could prep the avocado the night before, just add a bit of lime juice to stop it going brown.

Baked beans ( low sugar type) on a potato waffle. The kids might like that too! A savory muffin.

BuffySummersReportingforSanity · 03/07/2021 15:46

I might give this a try cooked in the microwave, and minus the pureed apple (maybe just a few blueberries instead, or something). I've got some chopped nuts as well and I've been thinking of giving chia seeds a try.

Potato waffle and beans definitely not happening, though...
