Cakes/Desserts to freeze in individual portions?

I'm doing a bit of baking for my great-aunt who's been ill and is in need of gaining a bit of weight and generally being fussed over. Dinners are covered but I'm looking for desserts that will freeze well in single servings. She says she loves anything sweet, but I'm sure she's pretty sick of my lemon drizzle cakes and bakewell slices by now Blush I've tried cheesecake slices but they ended up a bit worse for wear, and sticky toffee pudding was too much faffing about freezing and defrosting the sauce separately. Annoyingly I also have to avoid scones/pastry because that's always been her speciality and I'd be too self-conscious Grin Has anyone got recipes/suggestions that have worked well?

Would she enjoy things like Magnums or choc ices too? Chocolate brownies freeze really well and you could provide some pots of custard. Even preslicing a vienetta or Arctic roll may give more options? I have two children who I am trying to feed up so thinking of what I give! Angel delight with full fat milk perhaps? My grandma loved the butterscotch.

Individual sticky toffee puddings or Syrup sponge made in cupcake tins
Chocolate brownies
Apple crumble made in little ramekins
Rice pudding
Bread & butter pudding
Apple pie

Definitely any kind of crumble in individual ramekins. Provide her with a packet of individual cartons of custard to go with them - the long life ones. I almost always have a couple of apple/blackberry crumbles in the freezer and then just stick them in the cold oven while still frozen, turn on the oven and 45 minutes later - yummy treat.

If you are interested, I have an excellent spiced carrot muffin recipe that freezes exceptionally well and they make a wonderful breakfast or mid morning snack. They are a bit of a faff to make so I usually do a double batch. I left 40 of them in my Dad's freezer when he was ill a few years ago.

Torte - lots of different flavours to choose from

All can be sliced and frozen in portions.

Felicity Cloake's banana bread. I make it in a square brownie tin lined with foil, cut into 16 squares once cooled, and freeze. An individual piece will defrost and warm up in about 1.5 - 2 minutes in my bog-standard microwave, and it's delicious with custard, cream or ice cream.

I do carrot cake, chocolate cake, Victoria sponge etc and freeze.
Profiteroles also freeze surprisingly well sk long as you freeze the chocolate sauce separately.
Also parfait are lovely

Try to use full fat milk and cream where needed, including on breakfast, in coffee etc
