Easy lunch for all the allergies?!

I need a relatively simple idea for lunch on Saturday please. Ideally cook in advance.

2 adults, 'normal' (!)
1 vegan, limited pulses/veg (IBS issues)
1 adult, allergic to nuts and pulSes
1 adult, GF, anaphylaxis to shellfish & fish. Aims for nominal meat.
1 child, aged 3

Any ideas? Just an 'easy' lunch, but struggling what to cook within the limitations...?

You can get gluten free pasta but the other processed ingredients in it can set off someone who can't tolerate pulses etc.

It's easier to serve up plain white rice or jacket spuds or chips in sunflower oil as a carb base.

It's a really tricky one! I'm with all the others who've said mezze / small buffet.

Is your GF coeliac?

I'd probably lean towards something rice based and go risotto/biryani/nasi goreng and then some vegan brownies (using spelt or gf flour) and fresh fruit

I use brown rice pasta. It’s not the same as “normal” pasta, but pleasant enough. Baked potatoes would be easy but I’ve not a clue what I’d put on them if I couldn’t have cheese or tuna, all other options have beans, onions, garlic, meat etc in.

Hi @AutumnCrow. I'm the GF - not coeliac but I do develop internal bleeding from wheat & gluten (eventually needing transfusions) so do have to be pretty careful.

I think I'm going to go with the fajitas/tacos/tortilla type idea. Jacket potatoes seem a little heavy. Lots of options with fillings, plus I will personally appreciate any leftovers! Also easy enough to do most in advance. Thanks for all the ideas.

@LegoCaltrops : if I did tacos/tortillas with assorted fillings to choose from, what would be the best inclusions to ensure it is FODMAP friendly?

As it happens I made a list of the better vegetables just yesterday. These are all low to very low fodmap, & could be used in the type of meal you mentioned:
Rocket, red or yellow peppers (avoid the green ones), carrot, collard greens, cucumber, kale, chives (good to use to give an onion flavour), radish, swiss chard, fresh tomatoes, pumpkin or squash of any types except for butternut squash, any kind of lettuce, alfalfa sprouts.

Fruit-wise, the only ones that are completely unproblematic are rhubarb & strawberries. Others can be served but only in limited amounts. She'll probably already be at her limit with other things so strawberries might just be easiest TBH. Canteloupe is ok in small portions, up to 120g but there's something called "stacking" - basically eating several things in small quantities that add up to too much & it becomes uncomfortable.

You're probably pretty wise to go with plain nachos or something. Tortilla chips would be good, several of the plain corn based ones are fine, just make sure they only list corn, oil & salt on the pack. Plain rice also ok.

Don't use any garlic or onions. Not even a tiny amount, unless you've specifically checked with her first. Check seasonings & spice mix as many will include these. I was surprised.

No problem. It just happens that I just recently started the diet myself, & I thought it would be a lot easier for me if I write out a list of all the vegetables that are either free of fodmaps, or so close to free that they don't matter. Some of them give a portion size that I wouldn't normally go above in one meal anyway, e.g. a carrot, the portion size is 1 medium carrot per meal. And lettuce is 75g per meal, that's about 5 or 6 medium sized leaves. I plan to stick the list on the side of my fridge.

How about a cherry tomato tarte tatin, made with jus-rol gluten free pastry, which is also vegan, served with a lovely big salad?

I make it all the time (and it doesn't have to be made in the Instant Pot), and you could just leave out the peanut butter if required. It's delicious!
