Béchamel sauce using yogurt?

I’m looking for a healthier alternative to white sauce for pasta bakes, moussaka, lasagne etc. Usually I make a white sauce using butter, flour, milk and cheese plus add some more cheese on top Wink

Has anyone tried a yogurt based sauce (with eggs and corn flour?)

Or is ricotta cheese a safer option while still being lower in fat than a traditional white sauce with cheese? Thanks

Pinch of nom use a yogurt and egg combo for lasagna here
it's pretty good, more chewy and cheesy than bechamel, I use similar on moussaka. Overall prob doesn't make it much healthier though

In family size lasagna I 300g use low fat cottage cheese combined with 1 egg and about 60 of (defrosted) frozen chopped spinach as middle layer, and on the top small amount of low fat shredded mozzarella sprinkled on top of a bechamel based on olive oil, cornflour & skim milk (increase cornflour to thicken better).

I don’t add cheese to béchamel (and I love cheese), so possibly worth trying it without first to see how much you miss it? I can imagine ricotta being delicious in a summery vegetable lasagne though!

Why go to all the trouble of making a lasagne and then ruining it with bechamel made with yoghurt and cornflour? To be healthier surely just eat a slightly smaller portion of delicious lasagne with a lot of salad/vegetables?
