pizza: 1 part plain flour to 2 parts strong

I only have 200g of strong flour; if I add 100g of plain, (need 300g total) will it be a disaster?

No, not at all. Sometimes I make pizza dough with all plain flour if that's all I have.

It'll be fine. Pizza dough works with plain flour in an emergency; I usually make mine with half and half.

Excellent, thanks, will crack on. Although I did just pour balsamic instead of olive oil into the yeast/water mix, so success is not a given at this stage...

Dinner was fab - can't believe I never knew plain would work. I could have saved myself the disappointment in the past of scone based pizza when I've been out of strong. Scone pizza is not pizza at all; it may have been good enough for Delia in the 70s, but we've all moved on now.
