Hot lime pickle recipe anyone?

Have looked and there are so many varieties. Just want a fool-proof Indian restuarant type one.

Tinker, you can buy it , the Sherwoods one is pretty close to Indian restaurant type and GORGEOUS
(Don't know a recipe !)

Angeliz - I know but I really want to make it. Went to a food festival thing on Sunday and there were loads there - should have bought some of course. But now I want some that I've made

My Dad made some once - I will ask him for the recipe. He made it in a huge jar (like an old fashioned sweet shop jar) and it festered (he said "matured") away for years. The smell was enough to blow your socks off!

Tinker - founda recipie in my indian cook book but have not made it before!
25 limes
225g salt
50g fenugreek powder
50g mustard powder
150g chilli powder
15g turmeric
1pint mustard oil
1 tsp asafoetida
25g yellow mustard seeds, crushed.

Cut each lime into 8 pieces, remove pops. Place the limes in a large sterilised jar, add salt and toss with the limes. Cover and leave in a warm place for 1-2 weeks until the soften and turn dull brown in colour.

Mix together the fenugreek, mustard powder, chilli powder and turmeric and add to the limes. Cover and leave to rest in a wardm place for a further 2 - 3 days.

Heat the mustard oil in a frying pan and fry the asafoetida and mustard seeds. When the oil reaches smoking point pour it over the limes. Mix well cover and leave in a warm place for a further week before serving.

I have no idea what asafoetida is, do you???
