Ideas for 1 frying pan, 1 saucepan meals. Only eats chicken , bacon and veg

My DD1 has moved to her own flat and has limited equipment.
At this point she has a frying pan with no lid and a small saucepan with a lid.
A spatula, a wooden spoon, a measuring cup, a sieve and some basic cutlery.
Any suggestions for meals?
She walks past the local fruit and veg market on her way home from uni and there is a supermarket across the road from the flat.
She does not eat red meat or fish or pork, but will eat bacon (go figure) and chicken.
Help please, at the moment the Vietnamese takeaway next door is getting all her custom

Risotto, frittata, stir frys, fajitas- there’s loads that can be made in one pan in the hob.

Would she be able to stretch to a small slow cooker? That would massively increase the amount of options for her. Stews, soups, curry etc. You can even do porridge overnight in them.

If not, simple is probably best. Pan fried chicken or fish with salad. Use the pan for potatoes or rice. Stir frys. Bacon, mushrooms and eggs cooked in the frying pan with some tinned tomatoes done in the saucepan. Maybe look for some camping cooking ideas as well, minimal amount of equipment is usually available there.

No room for a slow cooker, unfortunately.
She likes spice, first thing she bought at the market was a bag of chilli!

If she can afford to buy meals from a takeaway surely she can buy a few more kitchen essentials Confused . There are lots of easy 'student' cookbooks available or ideas on line, surely a Uni student can research that? My DS is at Uni and makes amazing meals from low budget ingredients with limited equipment - mainly quickly fried 'main' with veg thrown in. Has she got an oven? Jacket potatoes etc.

Pans are cheap. Can you not treat her to a couple more? Or a steamer pan if she's short of hob space. Does she have an oven? Grill? Roasting pan?

Hi,
You are right, she could research but doesn’t.
She has an oven.
I think the idea of pan fried main and jacket potato or home made chips in the oven is a great idea.
I need to get her an oven proof dish and tray.

This series of roasting tin recipe books is really good. I've linked the quick one but there are several others including a world food one if she likes spice. I bought one for my single friend in a small flat, together with a tin, and he cooks from it several times a week.

Does she actively want to cook? Perhaps she isn't bothered. When I was at Uni one of my flat mates ate egg and chips every single night, he just wasn't interested in cooking Grin.

I also recommend the Quick Roasting Tin, haven't made a bad recipe from it yet, for me, dh (huge appetite), ds (19 and an American footballer so bulking up with protein), dd2 (normal appetite) and me (on a diet).
