Strawberry glut

We went strawberry picking today and slightly overdid it. I’ve made strawberry jam, strawberry ice cream and strawberry milk today. Obviously had strawberries and cream for pudding but still have 2kg left. Any ideas for what I can do with the rest? They are very ripe so probably only have a day or two before they turn.

Nigella's strawberry crumble recipe is amazing

I'd also do as pp advises and make a freezable strawberry compote type thing which will come in handy for ice-cream, smoothies etc.

Vodka. Do it usually with raspberries but am sure would work with strawberries. 3/4 bottle of vodka, smooth the fruit in. Tablespoon or so of icing sugar depending on sweetness of fruit. Top on tightly, lie on side in dark place. Turn monthly. Decant in December, vodka in bottles for personal use or gifts, strawberries as v boozy layer of trifle.

Thank you all. Lots of good ideas. Strawberry crumble is probably my favourite but sadly DC will not eat cooked fruit.

I think I’ll go with a strawberry sauce, possibly for the freezer. Does anyone have a recipe? And could I use the sauce to make a fool as I think the DC may like that?

I just put the strawberries and a small amount of water and sugar (if necessary) in a saucepan and let them cook down over a low heat. Once softened I add in some raw strawberries so they remain more whole, then allow to cool and freeze

Yes you would be able to mix them with whipped cream to make a strawberry fool

They will mould very quickly even in the fridge. To stop them going off before you can use them, wash them and macerate them with sugar. That will give you a day or two longer to decide what to do with them.

I would use up a few —a lot— by making a Victoria sponge and filling it with whipped cream and sliced strawberries then inviting my good friend viques for tea......

Thanks, that’s a good tip. Hopefully I’ll get a few extra days out of them.

If they make it to the weekend I may even make a Victoria sponge for viques to share Grin
