ok - here it is:
Chupi
An Argentinian soup
serves 6
3tbsp cooking oil
1 lage onion, finely chopped
1 clove garlic,finely chopped
1 red pepper - diced
2 fresh red chillies -deseeded and finely chopped
3 tomatoes, blanched,peeled and chopped
450g best minced beef
1 large potato - diced
2 carrots,finely diced
1 tbsp flat-leaf parsley
1.2 litres beef stock
salt & pepper

Heat oil in large, heavy pan and fry onion,adding garlic when onion is limp and golden.
Add the pepper,chillis and tomatoes and simmer for 5 mins
Stir in the beef,smashing down any lumps with a fork, then the potato,carrots and parsley. Pour on the stock,previously brought up to the boil,season with half a tsp of salt and some pepper. Bring back to the boil and simmer,covered for 15-20 mins.

It's really lovely and dh serves it with his home made bread. yum !

how about bobotie?

To feed 4 you will need

450-500 grams of minced beef
2 or 3 slices of white bread ( dont be picky - stale and crusts are fine)
a coffee mug of milk initially - you might need a little more later
a generous handfull of raisins or sultanas
(optional) small handfull of flaked almonds
4 or 5 heaped tablespoons of Mrs Balls Peach Chutney - ordinary Mrs Balls is OK, or any peach/mango chutney as a last resort
2 heaped teaspoons of curry powder - this makes it tangy. More for hotter, less for a hint, but the curry powder balance is v important. More fruit - more curry

2 bananas - very ripe is good

Take a flat dish and soak the bread in the milk until it is very soaked. While it is soaking, brown the mince in a deep pan or a wok. Remove from the heat. Squeeze the soaked bread to wring the milk out - NOT TOO MUCH - enough that it sticks together, but not bone dry squeezed. Put the squeezed bread into a mixing bowl (or you can mix in the pan or wok if its big enough) with the meat and mix it around until you dont have any clumps of bread and the bread is well distributed through the mince. Add the sultanas and optional almonds and the chutney and mix again. Finally, add the curry powder and a 1/4 teaspoon of salt by sprinkling widely and mixing in. Dont get the curry powder in a clump.

Put the mixture into a flat ceramic dish - like a lasagne dish and level it out as best you can. Beat the two eggs into the remaining milk and pour over the meat mix till all is covered up to a depth of about 2-3mm.

Slice the bananas long-ways and place the 4 half moons decoratively into the eggy mix on top. Stick in a 200 deg oven for about 25-30mins or until the egg custard is set and browning slightly.

I normally serve it with a generous helping of Basmati rice and with the rest of the bottle of chutney on the table.

bosnian 'lazy pie'

-preheat your oven to around 180 C
-pour a little oil on to a baking tray (anything from 2cm+ deep is fine) and pop in to the oven to heat up a bit
-brown your mince (stop as soon as poss so you don't dry it out)
-take out tray and spread the oil about for even coverage
-mix up a pancake batter
-spread the mince over the baking tray
-add onion (raw)
-you can also add some small cubed potatoes if you want (par boil them if you prefer, depending on the potato type)
-pour the batter over everything so that it is all covered and quite thick (along the lines of a spanish omlette)
-a few drips of oil on top for true calorific authenticity
-pop it in the over and wait for the batter to cook through. About 15 or 20 mins should do it.
Yum!

I make a baked pasta dish that uses the lasagne componants but you don't layer it.

I make a bolognaise sauce, a white sauce and cook some large pasta shapes.
Combine the pasta and white sauce in a large roasting tin or ovenproof dish, then add the bolognaise sauce. Stir to combine a bit and then top with grated parmesan and cook at gm6/ 180 for 30-40 minutes.

It's a nigella recipe and I also make the garlicky mushroom version as well because my OH is veggie.

i often do meatballs but i put them in a roasting tin with,
2 tins tomatoes
1 red chopped pepper
1 yellow chopped pepper
1 red onion chopped
a tin of kidney beans
a few shakes of various spices and some garlic
mix it all up then lay meatballs on top and bake in oven for about 45 mins
serve with cous cous

nappyaddict - normally with a shredded cabbage salad (with a light cider vinegar and oil dressing) and a chunk of bread. It's very filling though so often enough we just eat it on its own.

sometimes make a beef stroganoff with minced beef

fry garlic, onions and peppers and mushrooms in a pan with a little olive oil, add teh minced beef and a splash of wine (red or white, some recipes call for sherry or whatever but we never have that in the house)

when the minced beef is cooked through add a large tub of creame fraiche and grated parmigine cheese (chedder will do) and a spinkle of paprika, serve over pasta or rice!

o.k. this is what I make with minced lamb or beef:-

Ingredients:-

6 large firm tomatoes (Beef preferably)
50g/1.5oz unsalted butter
1 medium onion, finely chopped
5 tbsp oil
1 tsp fresh ginger root, finely chopped
1 tsp fresh garlic, crushed
1 tsp pepper
1 tsp salt
1/2 tsp garam masala
450g/1lb minced lamb (or beef)
1 green chilli
fresh coriander leaves (packet)

heregoes:-

  1. Preheat the oven to 180 degrees/Gas mark 4 and rince the toms, but off the tops and scoop out the flesh.
  1. Grease a heatproof dish with 1 oz butter, place toms in the dish.
  1. Heat the oil in a pan and fry the onion until golden brown.
  1. Lower the heat and add the ginger, garlic, pepper, salt and garam masala and stir-fry the mixture for 3-5 mins.
  1. Add the minced lamb or beef to the saucepan and fry for 10-15 mins.
  1. Add the green chilli and fresh coriander leaves and continue stir-frying the mixture for 3-5 mins.
  1. Spoon the lamb mixture into the tomatoes and replace the tope. Cook the tomatoes in the oven for 15-20 mins.

Scoff!!!!!!

I usually do this with a veggie curry or something along those lines. But, to be honest, 2 x stuffed tomatoes on your plate does very nicely thank you very much!. Sometimes I just do the mince and we scoff with a bit of salad.
