Made a salad nicoise the other night when it was far too hot to think of cooking, and very refreshing it was too.
Trying to think of other options such as Caesar salad, Greek salad.
I know you can put anything in a salad, and I know there are lots of hits if you Google. Just wondered if people had any tried and tested favourites?

I love a 'warm-ish' salad with roasted veggies I've made in advance and then heated up. Mixed with cold leaves and tomatoes etc. Add crispy quorn fillets on top. So good!

Thank you @LondonTTC - roast veg is something I'd never thought of in a salad, sounds lovely! Am imagining it with a bit of feta

Mixed grains, lentils, feta, grilled veg ( cooled), tomato, olives.... Pretty much anything you can think of. Balsamic dressing 😊

Allegra mcevedy's Brutus Salad (can't link on my phone, in sure Google will find it) is the best salad I have ever eaten. Its just a perfect combination.

Depends if you want to do zero cooking or just minimal...
Roast chicken (left over or shove a breast/thigh in the oven) with goat's cheese, spinachy leaves, almonds and strawberries. Some fruity vinaigrette/dressing.

Tuna steak, seasoned and rubbed with a bit of ground coriander, flash fried, with salad leaves, cucumber, tomato, sliced mango, thinly sliced red onion, avo and macadamia nuts. A mango or limey dressing. Crusty bread!

I love it when summer comes around and we have these!

Pear and Stilton (add walnuts for even more taste/calories!)
Feta and watermelon
I'm a big fan of the sweet and salty combo in a salad!
The dried crispy onions in the condiment section add an extra dimension to any salad (thanks to Joe Wicks for that tip)

I like salads with curry flavours so usually chicken mini fillets marinated in a tandoori paste and yoghurt or cauliflower and chickpeas dusted Garam masala and turmeric, then Nigella seeds. Spray with oil and bake till crunchy. Really nice with a green salad, chopped mango and a mint and cucumber, yoghurt dressing.

I recreate an amazing salad that I had in a museum cafe years ago: fry cubes of cooked sweet potato with sliced mushrooms and halloumi then mix with salad leaves and avocado. Dress with olive oil, lemon juice and balsamic vinegar. Serve with flatbread or crusty bread and dry white wine or rose.

Bloody LUSH.

We did a lovely tomato type salad last night.

Full punnet of tomatoes chopped (I used halved cherry tomatoes but I’m sure you can use whatever. Half a large red onion/a whole small red onion sliced thinly. I imagine shallots or spring onions would work too. Half a cucumber chopped into small chunks. (I wouldn’t worry too much if you don’t have any).

Dress with salt, lots of black pepper, olive oil and wine vinegar

Top with crumbled feta or grilled halloumi. Or use as a side dish.

I am drooling reading these suggestions, thank you all. A far cry from the limp lettuce leaf/a few slices of cucumber/tomato and a slice of ham which were the salads of my childhood!

Tuna, cucumber and beetroot salad is one of the more easier salads that I make that requires the least amount of faffing around. The second one is pesto pasta salad with baked cherry tomatoes added on top with some diced cucumber and pumpkin seeds to add that little bit of texture and crunch.

My current favourite is
-mixed salad leaves
-cherry toms
-cucumber
-grilled feta
-pinenuts
-walnuts
-tinned pears (or fresh mango)
-sprinkle of chilli flakes
-good caesar dressing or blue cheese dressing (soft blue cheese melte with creme fraiche and some garlic).

Had this at a friend's about a month ago and now eat it at least 3 times a week for lunch.
